Spicy Chipotle Turkey Burgers

Delicious! I omitted the onions and all I had on hand was shredded mozzarella, so I just threw a little bit on top of the patties. We loved these, thank you!

Tilapia Soft Tacos with Chipotle Cream

Very good! I cut the tilapia in chunks after cooking it and used shredded cabbage instead of the mixed greens. I also added a little chili powder. Great flavors. Thanks! :)

Caribbean Zucchini Bread

Fantastic! This is the best zucchini bread I have ever had. The only changes I made were to only use 1/4 cup oil and 3/4 cup applesauce, just because I ran out of oil, and added pecans instead of walnuts. This bread is super moist, has amazing flavor, and the texture is perfect. Mine did need about 60 minutes in the oven. Thank you for sharing this with us! :)

Olive-Cucumber Tossed Salad

Very good, but the Creole seasoning kind of disappeared in the Italian dressing, so it really didn't have much of a kick to it at all. Loved the saltiness of the olives with the cucumber though. Thanks! :)

Insanely Amazing Jalapeno Cheese Dip

Insanely amazing is right! Wow! So good! I usually can't handle much heat, but this tasted so good, I didn't care. I couldn't find a round loaf of sourdough, so I used a crusty Italian instead. I served this to a group of men during their fantasty football draft and it was devoured. Thanks Happywife, I will be making this very often during football season! :)

Good! Super sweet, but good. I used one chocolate crust and one graham cracker crust; the chocolate one seemed to be the favorite among people. I used Neufatchel, light Cool Whip, and skim milk. Thanks! :)

Quesadillas II

Delicious and very quick to throw together. Instead of cooking the chicken in oil I rubbed it with a bit of taco seasoning then threw it on the George Foreman. I then shredded it and mixed it with the salsa and a dollop of fat free sour cream to make it a little creamy. I did take another reviewer's suggestion and baked at 400 for 7 minutes, then flipped and baked for 5 more minutes. The tortillas browned and crisped up perfectly. My fiance *loved* this, so I will definitely make again. Great quick dinner. Thank you! :)

Lasagna Roll Ups

Excellent! I did make some changes, but this is a great base recipe. I used fat free cottage cheese in place of the ricotta, used a blend of shredded Italian cheeses instead of just mozzarella and parmesan, and added garlic, parsley, and black pepper to the filling. These were delicious and really easy to assemble. Thank you!

No-Guilt Zesty Ranch Dip

Oh YUM! Love this! I omitted the horseradish (not a huge fan) and the bacon bits (didn't have any on hand), but this is fantastic. I had a really hard time putting it in the fridge to chill, I wanted to eat it right away! I keep thinking of all the things I will serve it with. Thanks for sharing with us! :)

This was okay, but not great. First of all, it's totally unlike any raita I've ever had before, but that's not the reason for my 3 star rating. The flavor is just kind of strange. The paprika really threw me off and I didn't feel as though it belonged. Thanks anyway! :)

BBQ Feta and Hot Banana Pepper Turkey Burgers

Delicious! So simple, yet so good. I did add a little garlic powder and ground black pepper to the mixture. I also patted the burgers in cornmeal before putting onto my George Foreman grill, which gave them a nice crunchy exterior. The banana peppers from my garden are super hot, so I only used 1 large pepper, which was more like 1/8 cup chopped. Fantastic flavor. I will make these again! Thank you for sharing! :)

Quick and Easy Shrimp Fajitas

Good! I used a yellow bell pepper instead of red just because that's what I had on hand. I used fajita seasoning because I had a packet that had been hanging out in my cupboard for months, but next time will try using taco seasoning. I served it in tortillas with Cucumber Salsa (AR recipe). Thanks! :)

Good! I do think the cucumber to yogurt/sour cream ratio was a bit off; I would have liked more cucumber in this. I used lime-flavored salt and added some garlic powder. Served inside Quick and Easy Shrimp Fajitas (AR recipe). Thanks!

Grilled Lemon Herb Pork Chops
