White Cake Frosting II

Good flavor and easy to work with. It was nice and fluffy, which is just what I needed. I didn't have time to find Hi-Ratio shortening (whatever that is), so I used regular. It was a little greasy, but not greasy enough to kill the frosting for me. Thanks! :)

Garlic Chicken with Orzo Noodles

Delicious! This was really, really great. The flavors were light and refreshing. The only change I made was to deglaze the pan with a little white wine after cooking the chicken, which I think added a nice flavor. I think this would be great with a little lemon squeezed over top right before serving too. Very good. Thank you! :)

Zucchini Brownies

10 star recipe! These are just phenomenal. They were a huge hit with everyone and I had many requests for the recipe. The brownies themselves aren't overly sweet, so the frosting is just the perfect addition. Super moist, fudgy, and delicious. Will definitely make again. Thank you!

Tofu 'Fish' Fillet Sandwiches

I think this recipe has potential, but there is just one thing that really turned me off about it. The tofu slices were just way too thick for my tastes. I did three slices as directed, but sliced the fourth one in half. Those thinner ones came out super crispy and much more appetizing. I didn't have kelp powder, but I added some Old Bay to give it a little seafood flavor. The tartar sauce was yummy. Thanks for sharing :)

Quick and Easy Chicken Noodle Soup

Delicious and so easy. I used chopped up raw chicken and just threw it in the soup and let it all cook together. I halved the recipe, but I only had one can of chicken broth so I used that along with water and a half a package of onion soup mix for extra flavor. Really, really good. Ultra comfort food. Thank you! :)

Cherry Tomato Corn Salad

Good! This is a little heavy on the sugar for my tastes; I only used half the amount called for and still found it too sweet. I ended up adding more lime to even it out. I used cilantro instead of basil to better go with my main dish. Tasty. Thank you!

Delicious Black Bean Burritos

Super good. I did make a few changes to accomodate what I had on hand, but this is a solid recipe. I didn't have any red peppers or jalapenos (my garden is not cooperating!), so I just threw in a small can of diced green chiles. Very, very good. Thank you!

Cajun Pasta Fresca

This is a 10 star recipe! This has so much flavor and everything works together very nicely. I was a little short on time so I used canned diced tomatoes instead of fresh, but they worked well. The only other change I made was to use whole grain thin spaghetti instead of the vermicelli. The mozzarella and fresh parsley really make this a fabulous pasta dish. Yum! Thank you! :)

Eggplant Tomato Bake

Good flavor, bad texture. I followed the steps exactly and my eggplant was *so* soggy. I did add some seasonings and a little mozzarella on top, so the flavor was nice, but the eggplant was just mush. Thanks for sharing with us! :)

Moroccan Lentil Soup

Very good. My only problem with this was that I felt the cardamom was too prominent of a flavor, and I only used 3/4 of the amount called for. I added a lot more cumin, some chili powder, and more garlic to level it out. I threw everything in the slow cooker and let it cook on low for 9 hours. Very good, thank you! :)

Lemon Coconut Squares

Yum! These are super good. I halved the recipe and baked in an 8 X 8 pan. I did reduce the sugar a bit and upped the lemon juice. It turned out with perfect flavor... not too sweet, not too tart. I was worried that the coconut with blend in with the lemon layer, so I waited until the last 10 minutes of baking to add the coconut. Thanks for sharing! :)

Healthy Garden Salad

Excellent! This salad is beyond delicious. I used garlic powder instead of fresh garlic because I don't like raw garlic in my food and skipped the onions. I realized midway through making this that I didn't have any black beans, so I used kidney beans instead. The flavors in this are outstanding and I look forward to making it again. Thanks! :)

Southwest Stuffed Chicken

Excellent! I used reduced fat pepperjack instead of monterey jack and skipped the flour. My breading didn't stay on very well, which was my fault from skipping the flour, but this was still very good. The gooey cheese inside was really nice and everything had a great flavor. Thanks for sharing! :)

Crispy Potato Wedges

Fantastic! These were SO GOOD. I used a bit more garlic powder and had to adjust the cooking time, but obviously the size and thickness of your wedges make a difference. Great flavor, super crispy on the outside, perfectly fluffy on the inside, and super easy to throw together. Thank you for the great recipe! :)
