BBQ Bacon Ranch Dip

Reviewed: jul. 5, 2009
Excellent! Everyone loved it. I preferred it with Ruffles, but most people liked it with Fritos Scoops. The only change I made was to only put tomato on half (picky friends!). Thank you! :)

Southwest Chicken

This was pretty good, but I had to add a lot of spices to it to get it more flavorful. Great base recipe, just a little bland for our tastes. Thanks! :)

Chunky Cheesecake Brownies

Reviewed: jun. 22, 2009
I really wasn't too impressed with these, sorry. I was expecting "fudgy" from the description and these were definitely cake-like and kind of bland somehow. They aren't bad at at all, just not good to me. Thanks for sharing with us! :)

Delicious Feta-Crusted Salmon

Reviewed: jun. 22, 2009
Amazing! This is, without a doubt, the best salmon recipe I have ever tried. I used small salmon fillets, so my cooking time differed, but that's the only change I made. We're looking forward to having this again soon! Thank you :)

Pepperoncini Beef

Reviewed: jun. 18, 2009
This is one of our very favorite recipes; I've made it often since discovering it two years ago. It couldn't be easier and it's so good! I serve it on toasted kaiser rolls with melted pepperjack or provolone. Thanks so much! :)

Slow Cooker Pork Cacciatore

Reviewed: jun. 15, 2009
This was very good. I used a combination of button and baby bella mushrooms. I also used shredded mozzarella, as that's what I had on hand. The meat was fall-apart tender and had great flavor. It made the house smell amazing all day. Thank you :)

Hot 'n' Spicy Buffalo Chicken Salad

Reviewed: jun. 11, 2009
Awesome! My fiance loves anything that involves hot sauce, so this was definitely up his alley. We aren't huge blue cheese fans, so I used a blend of shredded Italian cheeses instead. This is a definite "make again". Thanks Celeste! :)

Crunchy Oven Fried Tilapia

Reviewed: jun. 10, 2009
Awesome! I did add some other spices to give the breadcrumb/cornmeal coating more flavor, but this is a solid recipe as written. The fish was perfectly cooked and the coating was super crunchy. Thanks, I'll make this again. :)

Spaghetti Squash I

Reviewed: jun. 10, 2009
Excellent! I only made two minor changes: omitted the onions (preference) and used olive oil instead of the vegetable oil. This is a fantastic way to serve spaghetti squash. We loved it, thank you! :)

Jalapeno Popper Chicken

Reviewed: jun. 9, 2009
My fiance gives this 5+ stars! I cut the recipe down to 1 serving and since my fiance is a jalapeno and spice lover, I used one whole jalapeno, which I left the seeds in. The only other change I made was to only fry this for a few minutes, just until the the breadcrumbs browned a bit. Then I baked at 350 for 20 minutes on a wire rack. This will be a "make again". Thanks! :)

Portobello Mushroom Stroganoff

Reviewed: jun. 9, 2009
Very good! I would recommend using your best judgement on the sour cream amount, however. I cut the recipe down to 2 servings and used about 1/3 cup of sour cream. The only other changes I made were to omit the onions (preference in this house), used beef broth, and added a clove of garlic, minced. Thanks! :)

Tomato and Pepper Salad

Very good, simple recipe. It's not too sweet, not too vinegary. This would be great with some cubed cheese thrown in there. Thanks! :)

Pollo Fajitas

Good! I was a little worried because of the marinade ingredients, but had to give this a try. Very interesting blend of flavors. I did add cumin and a bit of lime juice to the marinade. I thought it was good, but my fiance raved! Thanks :)

Romano Cheese Crisp

Reviewed: jun. 5, 2009
Tasty! I used a blend of shredded Italian cheeses instead of just Romano, as that's what I had on hand. Next time I would stick the bread in the oven for a few minutes to toast it before putting on the topping and broiling, as the bottoms were a little too soft. Thanks! :)

Penne with Chicken and Asparagus

Reviewed: jun. 5, 2009
Awesome! We loved everything about this. It's really light and delicious. It isn't a heavily flavored dish, but it's still great. I scaled the recipe way back, but wished I hadn't, as we both would have wanted leftovers! Thanks! :)

Amanda's Stuffed Peppers

Reviewed: jun. 3, 2009
Simple and tasty! I've always cooked my meat prior to stuffing peppers, so this was different for me. I was worried that these would be really greasy because of that, but they weren't at at all. The only changes I made were to omit the onions and I used a blend of shredded Italian cheeses instead of the Parmesan and mozzarella. Thanks! :)
