Zucchini Brownies...hmm hmmm
About this Cook
I like cooking. I have been cooking since my college days but mostly since getting married. Trying new recipes relaxs me. Whenever i am upset i try cooking something new/different which makes me feal good and relaxed.
My favorite things to cook
Being an Indian, i like cooking mostly indian dishs ... there is always some new recipe to learn. But since coming to USA i have explored more and love cooking american style and have learned some italian and mexican. Many recipes from this site itself. I have started baking too and enjoying it a lot... Fav : Indian,Italian,Desserts, homemade pizza, cookies etc
My favorite family cooking traditions
Desserts/cooking for Diwali (Indian festival) and last couple of years during christmas. We also have a tradition of cooking something new or different on every sunday. I do not worry much about how high calorie or healthy the dishs are for one day! This helps to be on track for the whole week and we look forward to sunday for some junk if we can call that !!
My cooking triumphs
Mostly Indian dishes. But recently I have mastered homemade Pizza and cookies !!!
My cooking tragedies
I tried an pear pie a couple of months back. It was a big disaster, was a big whole mess. I think the pears were too ripe or something ... it was bad!!. I have not tried a pie after that !!! And homemade bread, I have tried a few recipes, they were not that bad but not very good either. They tend to dry up or not stay soft as next day like the store brought!!!

Rolled Buttercream Fondant
Being my first fondant...very nice. But as others have said, found it tooo sweet also more greasy. But I am looking for a recipe without gelatin thats the reason went for this one. I like it but not completly satisfied with I got. I am going to try and keep searching but till I find the one this will be my fondant recipe. I halfed the recipe as other mentioned it required much more sugar. Also used butter flavored crisco. Taste was good but way too sweet for us. I just kept kneading in more sugar till I felt it was right!!

Zucchini Brownies
This is a great recipe. I was looking for eggless brownie recipe and stumbled upon this one...what a luck I halfed the recipe and used a 8 inch cake pan. Followed the recipe exact. It is a treat. I am a chocoholic but do not like things too sweet, whenever I try a recipe I always put less sugar than mentioned but for this one I did not since some reviewers mentioned it was not sweet without the icing and true they are. even for me the sweetness seemed less ... if u are not planning to ice it defintely increase the quantity of sugar. Next time I plan to try with applesauce
