I am a working Mom, and I would much rather pick dinner up on the way home than try to cook something. However, I am becoming more concerned with nutrition, and safety of take-out food.
My favorite things to cook
Anything quick and tasty. I do not own an oven. I have a radiant heat microwave and glass cook top stove. I have an electric Dutch oven for the big things like turkey and ham, but only use it twice a year.
My favorite family cooking traditions
Christmas and Thanksgiving are family meals, meaning that my brother's family and parents all bring something to the table. Its fun, and always different.
My cooking triumphs
My triumph is that I have perseverance. As long as I follow a recipe, I'm okay...but beyond that...well...see below.
My cooking tragedies
Other than catching the stove (old) on fire on Christmas Eve a couple of years ago, every meal I make is a tragedy. I just don't understand how to cook.

Super Sausage Gravy
Ha Ha Ha...what leftovers! I am not a fan of sausage, or sausage gravy, but my husband is. He has been looking for the "perfect sausage gravy and biscuits" for a while now. He found it this morning when I served him this! I used a pound and a half (had a half pound leftover from last Sunday's attempt by my husband), and doubled the flour and milk. I even liked it!

Irish Chicken and Dumplings
Tasty! My late Mother-in-Law made the best Chicken and Dumplings, but my husband liked this one almost as much. I put everything but the dumpling ingredients in the slow cooker and let it cook while I was at work. The first time I tried using the baking mix and turning it on high, but it made a mess. The second time I dipped out some of the broth and cooked the dumplings in a seperate pan. The consistency was fine that way.

Seven Layer Tortilla Pie
This was very easy to make, and very tasty! When I went to the store, I forgot to get the salsa, so I had to make my own. I just used some canned diced tomato with garlic and onion, some fresh diced onion, lime juice, cilantro, and the other 1/2 cup of the diced tomato called for in the recipe. My 8-yr old mashed the beans while I made the salsa. Everyone loved it, and so did I!
