Green Bean and Mushroom Medley

This was a very nice addition to our Thanksgiving meal. I didn't measure the seasonings, just eyeballed them. I also diced the onions very small because I get grossed out by big slices of them in my food!

Oven Fresh Seasoned Potato Wedges

These were terrific! I used regular canola oil instead of olive oil because I needed a more neutral tasting side dish. Also, because I like simplicity, I just threw all of the ingredients onto the sheet pan and tossed them together with my hands. Worked out just beautifully. The recipe is only missing the reminder to flip the potatoes halfway through cooking time so that both sides can get browned.

Corn Dogs

Very easy and very tasty. This recipe is missing a couple of helpful tips - dry off the hot dogs before rolling in the batter, and put the batter into a tall cup for dipping. I left out the black pepper because I didn't think it was necessary. Everyone loved them!

Lemon Garlic Tilapia

I'm sorry, but the way this recipe is written only earns it one star! We eat a lot of tilapia here in southern California, and I can tell you that 30 minutes to cook it is way, way, way too long! I cooked mine 10 minutes and it was perfect. Also, because I like to keep things simple, I just combined all the sauce ingredients together at once, instead of adding them separately. I decided to cook the sauce a bit before pouring it over the fish because I don't like raw garlic. The way I prepared this recipe was a big hit, and I will make it many more times.

I made this recipe as written. It was excellent and does not need any changes, in my opinion. I will, however, not roll the edges to a taper next time. I like my loaves to be a bit more uniform. A keeper for sure!

Olive Chicken II

I decided not to use boneless skinless chicken breasts, so I just used some chicken legs that I had around. They needed the full 45 minutes. This recipe was tasty, but a bit briny for me. Perhaps that's because I don't love green olives that much. My husband, who loves green olives, really enjoyed this recipe.

Buttermilk Cinnamon Bread

I've made this recipe a couple of times to decide whether or not it should be a permanent addition to our rotation. Well, I decided against it. This bread is good, it just seems like it's missing something and the texture is a bit dryer and more chewy than I usually like.

I used Greek salad dressing instead of Italian because it sounded better with the Greek flavors in the salad. I definitely preferred this as a cold side dish. Great in the summer.

This recipe was good. I used less olive oil than the recipe called for - I added it into the bowl after I had put in the tomatoes and other ingredients, then just sort of eyeballed it. As the mixture sits, it releases a bit more liquid. I made sure to add plenty of salt to the sauce so the finished pasta would have enough flavor. It was a good way to help me use my summer bounty of tomatoes.

Chewy Coconut Cookies

I don't normally like thin cookies, but the flavor of these is delicious, and I really enjoyed them. They came out a bit crispy on the edges and chewy in the centers. They were a nice change from the "puffier" cookies I normally make.

For me, this recipe was just okay. I steamed the broccoli prior to using it in the recipe. I also used cheddar because that's what we had on hand. It wasn't horrible or anything, just not the home run I was expecting.

Chocolate Chip Banana Muffins

I was definitely tempted to change up this recipe, but in the end I decided to remain true to the original recipe. Everybody here loves to add their own touches! Anyhow, I was quite pleased with these muffins. They were tasty, moist, and very easy to prepare. They really don't need any changes at all. Very good, thanks for a terrific recipe!

Shrimp Lemon Pepper Linguini

I am dealing with an overabundance of lemons from my tree, so this recipe looked like a great way to help me use them up. I cut way back on the ground pepper - I just eyeballed how much I wanted to use. It was probably like 1/4 - 1/2 tsp. I also used dried basil and dried parsley because I didn't feel like buying fresh and that's what I had in the cupboard. This recipe was good, but the whole family felt a bit "lemoned out" after eating it. If I were to make it again I might cut back on the lemon just a bit!

I love this recipe precisely because it does not include capers, which I don't really like. I too doubled the sauce, and thought this recipe made a lovely dinner. Great way to help me use up lemons from my tree!

Zucchini Carrot Muffins

My family loved these muffins, but I have to give them 4 stars because I didn't make the recipe exactly as written. I messed up and bought spice cake mix instead of carrot cake mix. I went ahead and used it though, and actually really loved the result. I omitted the raisins, and used 1 cup of zucchini and 1 cup of grated carrots to make up for the fact that I had the wrong cake mix. I also frosted the muffins with some leftover maple cream cheese icing. Fantastic!!

Best Steak Marinade in Existence

This marinade wasn't bad, but it just wasn't the "best steak marinade in existence". I followed the recipe exactly as written and used it to marinate a top sirloin steak that I grilled. Sorry to say, this recipe probably won't be a repeat at our house.
