Six Can Chicken Tortilla Soup

This is so freaking good, I make it all the time! I followed other suggestions and added garlic powder, cumin and chili powder and replaced one can of chicken broth with one can of low sodium cream of chicken soup. I've made it with canned chicken and it is still pretty darn good, I'd say 4.5 stars, but if you have time to pick up a rotisserrie chicken from the store, do it! That definitely makes it a 5 star recipe.

Tuna Noodle Casserole from Scratch

The old fashion, canned mushroom soup version is the one I grew up on and thought I loved. But after making this version, I will never go back (sorry mom). I followed the suggestions and added extra herbs and seasonings. So good!

Bruschetta Chicken Bake

For some reason I found this to be so much more delicious as a leftover than fresh out of the oven. I think next time I make this I will just wait a day before eating it. Also added some zucchini, which made it pretty darn tasty, I think.

Sandy's Casserole

This was really tasty and very easy to make. I replaced the mushrooms with broccoli and would probably like to add more veggies next time. I followed other's advice and stirred it half way through baking and had no problem with crunchy noodles. This is a very stick to your ribs kind of meal, so I probably can't make it too often, sadly.

Apple Pie by Grandma Ople

Grandma Ople sure knew how to make a delicious apple pie. I added vanilla, cinnamon and nutmeg as others have suggested, but otherwise I followed the recipe exactly. It was easy. I liked pouring the butter mixture through the lattice crust, that was fun.

Spinach and Feta Pita Bake

This was pretty good and easy. The sundried tomato pesto was a bit overpowering for my taste. I think next time I will use regular pesto and just add a few sundried tomatoes on top. And add some mozzerella cheese too.

Grilled Sausage with Potatoes and Green Beans

I made this twice, once in a 9x13 pan the oven with cheddar brats and once wrapped in foil on the grill with regular bratwurst. Both times it was delicious, but I think I will always use cheddar brats from now on. I love the cheesy addition.

Black Beans and Rice

This is good stuff and really easy to make. I didn't want to open a can of tomato sauce just for one tablespoon, so I added salsa instead. I really like the little kick it gave, I think I will always make it this way.

To Die For Blueberry Muffins

This muffins rise really well. I played around with the recipe a bit and made chocolate esspresso muffins by adding 3T of instant coffee to the milk and replacing the blueberries with chocolate chips. Another time I turned them into chocolate blueberry muffins by adding 1/4 cup of cocoa powder to the flour mixture, increasing the milk just a little and stirring one tsp of vanilla. It all came out good and tasty, this is a great base recipe for all kinds of muffins!

Zucchini and Potato Bake

I've made this twice, second time I added the parmesian cheese and broiled it for a minute at the end. Quite delicious. It also works if you don't have any potatoes and just double up on the zucchini.

Chocolate Mint Mayonnaise Cake

The cake was good, but the frosting was a horrible disappointment. It never thickened, even after beating it forever and then refridgerating. Use a different frosting if you are going to make this cake.

Banana Sour Cream Bread

Its true, this recipe is awesome. No modifications necessary, although I did sprinkle some left over cinnamon sugar on top of one of the loaves, which was a tasty addition if you need even more sweetness.

Awesome Baked Sea Scallops

I baked asparagus along side the scallops as suggested in the article, very tasty. Next time I will decrease the amount of bread crumb mix though. Also don't use frozen scallops, I had to cook longer than suggested and some of them got rubbery.

Raspberry Crunch Brownies

I thought these sounded weird, but tried them out anyway and it turned out to be pretty darn good. I recommend using the jam and grapenuts like the recipe says, it is quite crunchy and delicious. I made these for a party they were gone by the end of the night.
