Catfish Cakes
These were sooo delicious! I actually added a little lemon zest and Ritz crackers to the mix. I also boiled the fish in wine and water and some spices. To be more healthy and light I backed the cakes in the oven with a little sprinkle of olive oil. It was great! These cakes are my husband's new favorites! Thanks for the recipe and for all the reviews!
