Quick and Easy Tuna Casserole

Maybe more like 31/2 stars but better than I expected. I used canned chicken instead of tuna (don't like tuna), and halved the recipe. The only other differences were using canned peas, adding a sprinkle of garlic powder (probably won't bother next time), and sauteeing the onions ahead of time. One of my kids liked it and one didn't, but I thought it was pretty good. Definitely filling! There was one aftertaste that I couldn't put my finger on though - maybe the processed cheese, maybe the garlic powder or the peas. I will try it again though.

Lemon Linguine

Pretty good. Not very lemony but more like a type of pesto sauce. Simpler than making an actual pesto. I might make it again.

Zucchini Risotto

I made this with orzo and half the broth, plus had to leave out the tomatoes (husband hates them). I like being able to incorporate veggies into a side dish but the taste was a bit off. The herbs were too strong and it was missing pizazz. I think it needed a little acid or something. I don't know if the tomatoes would have made a big difference. Perhaps a squirt of lemon juice or rice wine vinegar would have added a bit of punch. I will try it again when I can reduce the herbs, add the tomatoes and a bit of "something else" to improve the flavor. Not a bad starter recipe though.

One-For-All Marinated Beef

Eh, it was all right. Not too sweet as I was afraid of, and hardly any soy sauce taste surpisingly. I used this on chicken and while my kids loved it, my husband and I were less impressed. Might make it again in a small batch just for the kids.

Succulent Grilled Hickory Pork Chops

Blah! This tasted like nothing. Well, there was a slight white wine taste but even that was subtle. I admit I used a some liquid smoke instead of hickory chips but I don't think chips would have helped. I even added extra garlic and some green onion but still nothing. Won't make again-oh well; thanks anyway.

New Potatoes with Caper Sauce

These were so yummy! Even my 7 year old asked for more. They do NOT need an entire stick of butter - I used 3-4 tablespoons and that was enough. Plus I used barely 1/4 cup of parmesian and that was fine too. I also forgot to add the vinegar and left out the capers- they were still great. Not sure how the vinegar would really make them much better.

Paprika Pork Roast

I changed a couple things based on availability, but the roast turned out tasty and juicy, and it looked nice too. One of the best we have had, and hubby has asked for it again. I did not use the ginger (not big fans), and used garlic powder with a pinch of salt (did not have garlic salt). I do not have a roasting rack so I simply roast it in a foil-lined pan with no liquid. I used the onions to start but they burnt to a crisp so I removed them- will try cutting them thicker next time. After an hour and a half it was done perfectly (at 350)and the drippings made a tasty au jus.

Strawberry Champagne Punch

Simple and wonderful. We made this for a bridal shower exactly as the recipe states, only doubled. Several of us that don't even like champagne had a full glass! It was a pretty, pinkish color, looked great with the berries floating and had a nice light taste. If you have a lot of big champagne fans you might want to cut the ginger ale, but otherwise I would make it just as stated and it will please even the pickiest person. It's a keeper!

Easy and Delicious Chicken

Good easy recipe when you have not defrosted the chicken. I only cooked my chicken for a couple hours, then took it out to cut up and smoothed out the sauce in the crock pot before stirring the chicken back in. I used slightly less than 8 ounces of cream chees (closer to 5-6 ounces) so it was not too rich. It was also not to "herby" which I feared. I'll keep this around!

Mom's Chicken

Eh...not great, not horrible. Chicken got kind of dried out, but that might not be the fault of the recipe. I doubled the BBQ sauce and the jam, but kept the onion soup mix the same. If I had not it would have been way too salty. I used blackberry jam as that was all I had. It was unremarkable and I probably won't bother with it again. But thanks anyway.

Very one-note recipe. My first bite just tasted like a big bunch of basil. Other than that there was nothing very distinctive about it. I gave it 2 stars because the chicken did come out very moist; but I won't be making it again.

15-Minute Marinated Chicken

I was pleasantly surprised by this recipe. I was a little nervous reading reviews that described it as too "tangy", so I added a few pinches of brown sugar to cut the mustard a bit, and some olive oil to make it more of a sauce. I also had to sub basil since I had no tarragon. I baked the chicken and it turned out moist and with good flavor, not too strong at all. In fact next time I will leave out the brown sugar and add less oil. I think we will enjoy the stronger flavor.

Steak Tip Marinade

Good flavor, not too spicy and a little sweet, easy to make, and better than plain barbecue sauce. Everyone, including my 2 kids, like this. I marinated some round steak for several hours, grilled the steak and boiled the leftover marinade to make dipping sauce. I will make again - perhaps in the crock pot next.

Misti's Chicken Marinade

I'm only giving 2 stars because this wasn't horrible - it was just bland. I halved the recipe but kept all the ingredients and proportions according to the recipe. It marinated all day and then I grilled it - blah! My husband summed it up the best: He made a face with his first bite and I asked if it was bad. He said "It's not bad, it's just...nothing."

Unbelievable Chicken

Pretty good, but not as good as I had hoped. It had a lot of strong mustard flavor and the other flavors did not really come out. I marinated it all day and grilled it -came out nice and tender and the family like it but it was not that memorable. I might fiddle with the flavors a bit and try again later. Made it a second time - reduced mustard to 2 TBS, was generous with the pepper, and added some extra oil. Better flavor.

BBQ NY Strip

This was soooooo good! I marinated 1 new york strip, and 3 small filets for several hours, then threw them on the grill. I didn't measure the spices exactly, just eyeballed it, but they made a really tasty, not too spicy combination. It was a touch sweeter than I expected, but flavorful and a definite keeper. All around the table you just heard "mmmmmmm". lol

Slow Cooker Chicken Cacciatore

Good start! I added tomato paste and a splash of red wine to a jar of spaghetti sauce plus all the veggies and a little extra italian spice. After cooking all afternoon the chicken was pretty tender, though not as much as I thought. Maybe that is about the quality of the chicken I bought, not the recipe. I may not make this a lot but I will def. keep it in mind.

Beef or Chicken Marinade

Boring! I would have given it 2 stars for blandness but I changed some ingredients so I bumped it up. I subbed brown sugar for honey, and cider vinegar for white (which should have helped the flavor). I also did not add onion - although it would not have helped. After hours of marinating then grilled, the chicken was very tender and had a mildly sweet, innocuous flavor. But no punch, no wow factor, just blah. We didn't love it, we didn't hate, it just was...and probably won't be again.
