Tiramisu II

OMG this was awesome. Not too difficult to make. I made it in a cheesecake pan and whipped extra topping and added coffee. Then I used it to glue the ladyfingers to the sides. Next time I will add more ladyfingers to the inside. It was a big hit at a dinner party.

EAGLE BRAND® Frozen Peanut Butter Pie

This is an easy recipe to make. I used chocolate wafer cookies and butter for the crust, yummy! I ended up making it two weekends in a row for company. Everyone loved it. The first time I used a large pie pan the second time I used pre-made chocolate graham cracker crusts, they were good but not as good as the chocolate wafer cookie crust. Totally recommend for a dinner party during the hotter months. Almost tastes like peanut butter ice cream.

Hawaiian Banana Nut Bread

This was absolutely awesome! I made half without nuts and half with nuts. The only problem I had was the one with nuts, the middle would not get completely cooked through. After baking for over an hour, I finally just scooped the uncooked part out of the middle and sliced it and took it to work. Noone even knew. This is a keeper.....a great change from ordinary banana bread.

Best Lemonade Ever

Great lemonade, but a little sweet. I added more lemon juice then receipe called for and served over ice to dilute it a little. Overall, enjoyed it.

Grilled Tilapia with Mango Salsa

WOW! What a great meal for my dinner party. I enjoyed making the Mango Salsa and because it made so much, I chilled some and served part of it as an appetizer with baked Nachos. It was fantastic. The fish had such a wonderful flavor with the maranade. I found it a little hard to grill becuase Tilapia is somewhat fragile, but I made sure the grill was oiled good and was hot. Some of the fish broke apart which made the presentation a little hard, but that didn't matter because it was so good. I highly recommend this if you like fish, even if you don't it's so mild with the Mango Salsa you wouldn't even know it was fish. Give it a try!

Brie Cheese Appetizer

I served this appetizer for my dinner party. It was excellent. Instead of the Apricot Jam, I used pomegranate & Mango Chipolte sauce. It was a little spicy but everyone loved it.

World's Best Lasagna

This was awesome. I made it for my daughters bridal shower luncheon and it was a hit. I actually made the sauce two days before, assembled the lasagna the day before and then heated it before the shower. Simple and very tasty, sure beats my old recipe of all day cooking. Thanks.

Magic Mango Bread

I made this recipe last night substituting 3/4 cup applesauce for the oil and adding 1/2 stick butter (unsalted). Also, I did't add the raisins or nuts only the coconut. Wow, is it moist, almost like mango pudding, but very delicious. I took one to work and it was gone within minutes.
