Creamy Zucchini with Linguine

I really liked this. I was out of milk so I used chicken broth (about a cup) and cream cheese (1/2 a package). I will try the recipe as written next time, but it was easy and a good way to get rid of my zucchini.

Donna's Chocolate Zucchini Bread

I have lots of zucchini to use up. I halved the sugar and used cocoa powder/veg oil instead of bakers chocolate. Cooking time is a bit long, mine were done in about 40 min. Kids loved it!

Sweet, Sticky and Spicy Chicken

This is a great recipe, it reminds us of a chicken dish from our favorite chinese restaurant back in NY. I served it with jasmine rice and steamed broccoli. I added sesame seeds one night, very yummy!!

Fruit Pizza

brought this to an end of school year picnic at the beach. I made individual cookies and put them in cupcake wrappers. I used blueberries and strawberries, and i added a splash of vanilla to the frosting. This got rave reviews.

Black Beans and Pork Chops

This was GREAT! I was searching for recipes to use cilantro from our garden, and this fit the bill. The only change I made was I seasoned the pork with taco seasoning (taco seasoning 1 from this site), served with white rice. The cilantro makes this dish!

Broccoli Biscuit Squares

I did not have biscut mix, so I made pizza dough (quick and easy pizza crust). I added garlic powder, salt. pepper, and w sauce to meat. Different way to use ground beef, nice for a change of pace!

Penne Pasta with Cannellini Beans and Escarole

I subbed fresh spinach for escarole, and I rinsed and drained the beans and subbed 2 ladles of pasta water, I figured this would reduce the sodium! The kids liked it, even brought leftovers to school for lunch!
