Whipped Cream Frosting
I would give it a 5 if it was stiff enough to pipe. Wonderful flavor, not overpowering or too sweet, very subtle and easy to make. This will go with anything. I followed the directions exactly and had no problems with the cream. I whipped it in my KitchenAid instead of a hand-held. As others have mentioned this is a 'soft' frosting. I scratch coated my cake and froze for 45 mins. while refrigerating the remaining frosting. It spread very easily and the final product looks dreamy.

Strawberry Cake from Scratch
Well, I tried this again using cake flour this time. It was much better and received good reviews at a party. A bit lighter but still very sweet. I used the Whipped Cream Frosting which complimented the cake well. First Review (3 Stars): I made this for my Nephew's 4th birthday, he specifically asked for strawberry cake. I tried sifting the flour first as suggested, but it still came out very dense. While the flavor was good, it was very sweet and I was disappointed at how heavy the cake was.

Lemon Curd Bars
Very simple and yummy! Easy to make. Not too tart or sweet. I used more coconut and less almonds. I wll definitely make again.
