Big E's BBQ Rub

You definitely need to marinate your meat a few hours or more to get the full effect of this wonderful rub. I added a bit more garlic powder and regular mustard since I didn't have ground and it still came out great. Thanks!

Bar-B-Que Sauce

My 8yr old daughter made this tonight because we were out of bottled bbq sauce. When it was first made, I was skeptical because I didn't really like it right after being made.....BUT!!!!!......I put it on my ribs anyway since I was desperate, and it tasted delicious!!!! It didn't have the usual smokey flavor but I added a bit onion powder and I was satisfied. Thanks!!! So EASY!!

Super easy recipe!!!! Finally, a biscuit recipe that turns out PERFECT!! I didn't change anything......Well, okay, I am not a huge fan of traditional shortening but I found and all vegetable shortening by Spectrum with no hydrogenated oils (only ingredient is Palm oil) and I was quite impressed. These are so good...but oh so bad for my diet. I scaled the recipe to make 12 biscuits but it made 20 beautiful ones instead. Very impressed.

Salsa Chicken

I'm giving this recipe 5 stars because of the simplicity of it. The taste was good for maybe a quick weeknight dinner. Wish I had some sour cream to top it off. Easy enough for a supervised child to make.

Best Brownies

This recipe was so simple. It tastes similar to the "good brand" of box brownies....but so much better. I didn't change anything except I added walnuts to the batter. I can't believe how easy it was. Will definitely make again.

Twice-Baked Ranch Potatoes

Oh my. The ranch did something so wonderful to the flavor of this recipe. This came out so good.....and I didn't even have the cream cheese. I added a little more milk until it was creamy mashed potatoes and just a little salt and it was perfect!!!! Didn't even miss the cream cheese but I know if I had it, it would be over the top!!!

Famous Japanese Restaurant-Style Salad Dressing

Although this was not like the typical Japanese restaurant's ginger dressing that I was looking for, it was still pretty good. I agree with the reviewer below me that it may just need a bit more sugar to do the trick because all of the background flavors were there. I'll still make it again...but with a little more sugar.

Banana Cake VII

I was skeptical of this recipe because every banana cake I've tried turns out like more of a bread than a cake. I was pleasantly surprised how this turned out....and believe it or not....I didn't change a thing. Ingredients and prep was simple. Topped with cream cheese frosting (homemade, of course) and it was delicious!!

Cream Cheese Frosting II

Fantastic recipe. I made mine into strawberry cream cheese frosting by pureeing about 8 strawberries with just a touch of water....straining the seeds and mixing the "juice" into the frosting. Had to give out the recipe since my guests loved it so much!

Easy Chicken Enchiladas

Made these enchiladas today for a quick dinner tonight. I was quite surprised with the simplicity of this recipe. The only change I made was that I mashed the pinto beans and sauteed the "paste" in chopped onion, minced garlic, salt and pepper until most of the liquid evaporated.Pretty much I just made homemade refried beans and used that instead of the whole beans. Let me tell you....these were so good. I topped them with salsa and Cheddar before putting them in the oven. Taste was amazing...

Brown Sugar Meatloaf

I made this a couple weeks ago and it came out pretty good. Not the usual meatloaf. The only thing I did differently is that I baked the meatloaf without any sauce on the top or bottom. Then, with about 15 mins of cook time left, I put the sauce on top of the loaf and finished baking it. Came out fantastic.

Sweet Potato and Apple Casserole

I was just trying to use up some extra sweet potatoes & apples but I didn't think that it would come out this good.I omitted the pecans because a guest was allergic. Other than that, the only thing I changed was that at the end.....I melted the butter and made a roux w/the flour. I then added the brown sugar and made a caramel sauce. Poured it on the sweet potatoes/apples, mixed it up a bit and baked. Then, made a little more sauce to pour over when it came out of the oven only for 'eye appeal'. This was gone in no time. Definitely will make again.

Homesteader Cornbread

This came out beautiful. I followed the directions exactly. The only thing I would change is to add more cornmeal and less flour....but that's only my personal preference. Other than that, it was delicious. Would definitely make again.

Trinidad Stewed Chicken

With Trini roots, I found this recipe to be very much like what I am use to cooking. The only difference is that I mix the green onion, cilantro, garlic, onion, salt, and pepper....along with fresh thyme in a food processor with about 1T olive oil till it becomes a paste. Then, I rub it into the chicken and marinate it overnight. I also use the rest of the coconut milk mixed w/water to make herbed dumplings (not the kind w/baking powder....I like mine chewy and dense for this dish). Serve w/rice or with doubles (trini delicacy). Mmmmmmm.

Double Ranch Fries

Made these tonight to go along with burgers and salad. I actually tried preparing them 2 different ways. First, I simply fried the potatoes just like fries and then after taking them out of the oil, I sprinkled them w/the garlic salt and ranch mixture. Then, I did my second batch exactly as the recipe stated. Both ways came out good. The 2nd way did dirty my oil up pretty fast...as another reviewer mentioned. (ok ok i recycle my oil :-)) I liked the flavor of the fries better when I added it at the very end. Both ways are good though!!! Didn't last on the table.

Bread Machine Rolls

No need to look any further. These were absolutely THE BEST. I didn't change anything except I forgot to add the butter. I also used 1/2 white 1/2 wheat flour and added 1T wheat germ just because I'm trying to use it up. I made them into hamburger buns. Never again will I pay $4.00 for a pack of organic hamburger buns when these are a fraction of the cost and taste 2000% better. Oh yeah, I skipped the egg wash at the very end and brushed olive oil instead. Sprinkled sesame seeds on top and put them in the oven. Mmmmmm.... SO GOOD!!!!

Broccoli with Garlic Butter and Cashews

Made this tonight as a side for my Sunday dinner and it was really good. I completely overlooked the vinegar but it was still good. Next time, I will try the vinegar too. Made this along with some chicken that I marinated in "Korean BBQ Chicken Marinade" and "Coconut Pie" from this site and some fried rice. I was so proud because everything laid out so beautifully on the table. Thanks!!

Creamy Au Gratin Potatoes

Made this for Thanksgiving dinner and it was delicious! I didn't change very much. I chopped the onions and sauteed them with a little minced garlic before layering it on the potatoes. I also steamed some broccoli and layered it right along with it. It was gone in no time at all!

Coconut Pie

I was looking for something quick to throw together for dessert and this was perfect! Took me less than 5 mins prep time. I used 3/4 cup sugar instead of a full cup. And I didn't have time to make a pie crust so I did it crustless. It was soooooo good and so simple!!!!
