Cheesy Sausage Zucchini Casserole
Perhaps one of my new favorites -- definitely going to become a staple in our house! The only change I made to the directions was to only bake for 40 minutes and that seemed like plenty to us!

Curried Vegetables
I had really high hopes for this recipe, and it was only so-so for me (when followed exactly). Perhaps next time I will take the advice of others and make some additions.

Pasta and Bean Casserole
I substituted pinto beans for the garbanzo beans but was still disappointed. First, it was way too dry -- too much pasta, not enough of the "other stuff". Second, I didn't know this, but I'm not a fan of coriander. I didn't even finish my bowlful. I would have to change it a lot to make it again.
