About this Cook
I'm married and have two beautiful children who love to help me cook and bake.
My favorite things to cook
Calzones, meatballs, banana bread, apple dumplings, chicken broccoli casserole, tator tot hot dish, to name a few
My favorite family cooking traditions
I love cooking with my children. They are ages 4 and 6. Once we were listening to Bob Marley while cooking and the song "Stir It Up" came on. Now it's sort of our cooking anthem song.
My cooking triumphs
The best thing I've ever made was baked halibut in a saffron broth topped with a kalamata olive and tomato ragout and served on top of saffron mashed potatoes. The halibut had a creole season rub. The whole meal was full of delicious flavors.
My cooking tragedies
When I first cooked for my husband while we were dating, I made chicken parmesan for the first time. I didn't go by a recipe and just made it how I thought it should be. The chicken was way too dry and was not good whatsoever.

Grilled Peanut Butter and Jelly Sandwich
I've been making this since a friend told me about it 15 years ago. It is heavenly. Mmmm...I think I'll make on today.

Broccoli Salad IV
This was the recipe I was looking for!! I've had this at BBQ's and thought it was fantastic. I used craisins (dried cranberries) instead of raisins. I used half of a large red onion and that was plenty. Thanks for the great recipe!! I'll double it next time!

Lime Chicken Soft Tacos
You definitely need to omit the oregano and substitute it with fresh cilantro (I used about 1/4 cup chopped). Instead of cubing the chicken, I boiled the chicken breasts then shredded it with two forks. I think next time I'll double the sauce. It was a littly dry, but still had great flavor.
