Fresh Blueberry Pie II

The taste is fantastic and very fresh. I tried this as a double crust pie, though, and it didn't work for me. It was full of liquid and I ended up pouring it over ice cream like a sauce. The taste is so yummy though that I plan to try it again but making it as the recipe describes. I'm sure it will work better that way.

Easy Lemon Cookies

These were so easy and yummy! I used lemon infused canola oil for half the amount of oil and left out the extract. I can't wait to try it with different flavors of cake mix. Great for a quick treat!

Best Lemonade Ever

Delicious! I used bottled juice (I know, I know...but it's what I had in the house) and it was still awesome! I can't wait to try it with some crushed blueberries or with lime juice.

Peanut Butter Easter Eggs

This recipe was exactly what I was looking for! It was so easy but I did add an additional 1/2 cup peanut butter. I also added a pinch of salt as my peanut butter was sugar/salt free. They are delicious and the perfect addition to our Easter table.

Peanut Butter Noodles

Delicious! We all ate it up, even my 2 year old. I did make some substitutions: capellini instead of udon, red pepper flakes instead of chili paste, tripled amount of peanut butter. I loved this dish and will make it again!

The Best Rolled Sugar Cookies

Fantastic! The dough was beautiful to work with. I took the advice of another reviewer and stirred the dry ingredients by hand, rather than the mixer. It was tough but the dough was thick, not too sticky, and looked perfect. It was very easy to work with after chilling too. I rolled and cut with cutters, rolled a log and then sliced, and then did the ball/squish with a glass trick. All worked perfectly! The taste, baked and unbaked (hee hee) is outstanding! This is the best rolled sugar cookie I have tried.

Fudge-Filled Dessert Strips

This was a huge hit at Christmas. The dough is so beautiful to work with; soft and velvety. I added chopped cranberries to the chocolate filling in some, too. I will make these again and next time, I'm going to try using white chocolate instead.

Creamy Vanilla Pudding

My husband and daughter usually love vanilla pudding but they didn't seem wowed. I thought it tasted too much like custard instead of pudding. We felt like the egg taste was a little too heavy for our tastes. But it was very easy and overall, the recipe was successful.

Peanut Butter Kiss Cookies

eh. I wasn't in love. My husband liked them enough but he wasn't wowed either. We use organic, natural peanut butter so I'm wondering if we'd like them better using a standard brand. It was very easy though and great to do with kids. If you use natural pb, add a pinch of salt too. It made a huge difference.

Oaty Cereal Bars

way too sweet for me and I even reduced the sugar to 1/4 cup. I like the idea but will probably try to add more cereal to stretch it. I also used a little real maple syrup because I didn't have quite enough honey and it was delish with the peanut butter. I'll keep the recipe and make again but will tweak it to make it less sweet. Oh, and my bars were perfect. I used a 9x9 and used a slightly buttered piece of parchment to push on the bars and really get them compressed. I also kept them in the fridge to harden up the peanut butter. They cut beautifully.

Libby's® Pumpkin Cranberry Bread

This is a fantastic recipe. I doubled the cranberries and left them whole because I like a tart bite. I only had 2 eggs so I added about 1/2 a cup of unsweetened applesauce. The texture is wonderful. I made 7 mini loaves and 12 muffins from this recipe. Great for gift giving!

Irish Cream Bundt Cake

Fabulous!!! I used irish cream coffee creamer in the cake because Bailey's can be expensive. But I used the real stuff in the glaze. It was awesome and I will definitely make it again.

Cake Balls

To Die For!! I made chocolate, spice cake, and lemon so far. I use chocolate chips mixed with a few tbs of shortening instead of the coating candy. These are a hit wherever I take them! I'm going to try peppermint ones for the holidays.
