My favorite things to cook
I especially enjoy creating my own salads and salad dressings without need for recipes. I have a great garden with lots of greens and fresh herbs so I usually have a variety of pestos I've made that can be used in dressing, plus I also have homemade herb vinegars (tarragon, lavender, cranberry etc.) and my cheese drawer and the nut section of my cupboard is filled with lots of different choices - mix and match to the menu.
My cooking tragedies
A horrible attempt at a Broccolli Tofu Peanut casserole that kept me and my husband away from Tofu for many years. I've recently returned to trying to find tasty ways to prepare tofu :-)

Apple Pumpkin Muffins
These were great! I also did the healthy revisions suggested by other readers - applesauce for most of the oil, reduce sugar by 1/2 , and I used a large egg white in place of the second egg. I couldn't believe how light in texture these were for being all whole wheat flour. Next time I'm going to add some chopped pecans. The only reason I didn't rate this 5 stars is because I think the amount of sugar in the original recipe is totally unnecessary.....

Apple Bundt Cake
This was tasty, though I thought the texture was a little dense. Next time I might try separating the eggs and beating up the whites to fold in. I substituted Applejack brandy for the OJ, and pecans for the walnuts, and cut back on the sugar just a tad.

Chicken and Sun-Dried Tomato Bruschetta
Made this as part of a Mediterranean themed outdoor party. (Also did the grilled peaches with honey cream cheese from this site, and some grilled figs stuffed with blue cheese and wrapped in prosciutto, and a caprese salad and some grilled vegies). I used a garlic infused olive oil to brush the bread, and then rubbed the grilled slices with a cut clove as well. YUM! Everyone loved this.
