Best Tuna Casserole

I notice that the recipe has been changed to show 2 cans of mushroom soup and I heartily agree. With one can it was just too dry and I think that the second can will make all the difference. I see this becoming a staple recipe in our house...especially when we have the bottom of a chip bag to use up, lol. :) Even with it being dry, the pickiest eater in the house went back for seconds...my jaw almost hit the floor, as he Never does that. Thanks JAICARD! :)

Potato Latkes I

Yesterday was my first time making these...so funny that it's today's recipe of the day. :) I thought that these were Very good. In fact, I think they were the hit of the whole meal! I made them as directed, except used Japanese bread crumbs instead of flour. As opposed to using a cheese cloth, I simply squeezed out the excess with my hands when I scooped, shaped, then placed them in the pan. To go with this I made Burgundy pork tenderloin, Sarah's applesauce (both recipes from here) and steamed broccoli. And of course had sour cream on the table too. YUMMY!!

Barbecued Round Steak

Very tasty. I sauteed some garlic and onion before adding the sauce ingredients. Used tomato paste and water, as I didn't have tomato sauce. Skipped the corn starch and water as the sauce seemed thick enough for me. Served over rice as recommended. The whole family enjoyed it. :)

Mango Pina Colada Smoothie

Absolutely delicious!! I used frozen mango, no ice and 1% milk instead of cream. The flavor was fantasic and it was rich and creamy. :) Will probably make these one evening and add some vodka, but will Definitely be making these again as is with brunch! :)

Spicy Turkey Burgers

These were delicious! I was a little concerned, as I'd never made turkey burgers before, and love beef burgers, but they turned out wonderful...and healthier...excellent combination! :) I used a can of green chili's, because that's what I had on hand, and added some shredded cheese into the mix, as I like the moisture and how it helps hold burgers together...but other than that, followed the recipe exactly. With it we had corn on the cob, a macaroni salad recipe that I found here and watermelon. Very tasty and we'll definitely be grilling these again!

Garlic Chicken

I had garlic olive oil, so I used that. I also crushed some crackers I had on hand instead of the bread crumbs as it was quicker (don't have packaged bread crumbs). As well as cheese and crumbs, I also added poultry seasoning and sage to add more flavor. This turned out very well, except it was a little soggy on the bottom. I guess maybe I'll put it on a rack next time. A tasty recipe that got gobbled up and I will make again. :)

Slow Cooker Chicken Stroganoff

This was really easy and really tasty...an excellent combination! :) I put the breasts in frozen, with the butter and italian dressing packet. Later added the healthy version of the soup and the cream cheese. The 'gravy' seemed to dry out/thicken up pretty quickly, so I added some chicken broth, but that made it pretty salty. Perhaps next time I'll add an extra can of the soup, or do as others suggested and add some wine as there was barely enough sauce...and lots of gravy is always good! :) I served it over egg noodles. It was a big hit! :)

All-Around Good Smoothie

Yummo!! I bumped it up to 4 servings, for the whole family. My bananas weren't frozen but worked fine. I had the smoothie pack from Costco with frozen yogurt and berries and used 2 of those, used the liquid flax seed and just for the heck of it, threw in an apple, as well as the other items in the recipe. Everyone seemed to love it and there was none left (very unusual)! I'll definitely make this again. :)

Mexican Rice II

Tasty...reminds me of the rice in Mexican restaurants. In the past I'd added a can of diced mexican style tomatoes, cumin, chili powder, minced garlic, minced onion or onion powder, chicken broth for the rest of the liquid and put it in the microwave for about 10 minutes. Think I'll mix it up...sometimes authentic, sometimes my old standby. It's nice to have an authentic recipe to use...thank you! :)

Sausage and Egg Casserole

This is an easy and yummy recipe for Christmas morning. It gets requested every year. What I like about it other than the taste, is that it gets prepped the night before, so you can relax and enjoy the morning while it bakes.

Burgundy Pork Tenderloin

Having made this, I can understand why some suggested braising it in a pan first. I think it would be more aesthetically pleasing with a nice crisp exterior. However, the taste, without braising, was delicious!!! Tender juicy and flavorful! Since kids were going to be eating this too and I thought that the wine taste might be a little strong for them, I took anothers suggestion and used 1 cup wine, 1 cup beef broth. I diced shallots instead of slicing onions and I added sliced mushrooms. I think that next time I'll forgo the celery as it just didn't really seem to fit. With it I served au gratin potatoes (hubby's fave, and this was for his b-day), fresh green beans sauteed in diced bacon and shallots, apple sauce and beer bread and got rave reviews! :)

Creamy Au Gratin Potatoes

I thought this was pretty tasty and everyone seemed to really like it. I made a few changes: instead of onions, I simply sprinkled each layer (2) with onion powder. I used 1/2 & 1/2 to richen it up, instead of just milk. To the sauce I added some garlic, black pepper and cayenne pepper. I put the cheese sauce between layers. Next time I think I'll experiment with cheeses...perhaps make half of it gouda. Also maybe sprinkle the top with some paprika.

Mango, Peach and Pineapple Salsa

There was a LOT of dicing involved in making this. I hadn't noticed that it's set for 16 people. However, it was so YUMMY that even though there were only five of us eating it (one of which usually doesn't even like salsa), it was eaten until both big bags of chips were gone...and people we taking the little crumbs and scooping up what they could, lol. A big hit! :)

Easy Batter Fruit Cobbler

I was torn between 4 and 5 stars, but it was so yummy I went for 5. Very easy to prepare. I used fresh peaches and blueberries and served it with ice cream. Not super pretty...but the taste makes up for it!

Beth's Tex Mex Dip

I needed a quick and easy dip and this sure fit the bill!! Threw it together in less than five minutes. Used a 7oz can of diced green chili's instead (afterwards I read the others reviews of adding jalepenos and mayo, and may try that next time for the fun of it). Served it with tortilla chips and fresh veggies. It was a hit! :)

Fruited Ice Cream

Even though I messed this recipe up, it still turned out wonderful! I'm new to my ice cream maker and didn't read the directions, so the sweetened condensed milk froze to the bottom instead of mixing with the other ingredients (live and learn!). We scraped out everything we could, added a little more cream, blended it all in the blender and stuck it in the freezer. It tasted a little more...crystally? than creamy and I imagine that was due to it not having much of the sweetened condensed milk in there. Even with all that, everyone said that it was the best strawberry ice cream that they've ever had! Even my eldest son...who generally doesn't like strawberry ice cream! I will definitely be making this again! :)

Southwestern Roasted Corn Salad

This recipe was pretty good...even my son liked it! I did make a few adjustments: I only used 1/2 a red onion and that was plenty. I added a can of black beans. The sauce seemed a little bland, so I added more hot sauce, a splash of cider vinegar, a dash of taco seasoning (I already had it out for another recipe) and some cumin. It was a hit! :) A tip for de kerneling the cob: use a large bowl and a small bowl. Turn the small bowl upside down and put it inside the large bowl. Stand the ear of corn up on the upside down bowl and run your knife down along the edge of the cob. All of the kernels will fall into the bigger bowl, instead of all over your counter. :)
