Classic Macaroni Salad

Yummy!! I used cider vinegar, 1/2 vidalia (sweet) onion and added 2 chopped hard boiled eggs and a couple dashes of paprika and cayenne pepper for some heat. Very good and got lots of compliments. :)

Lime Chicken Soft Tacos

This was a hit! :) I made it even simpler by buying a rotisserie chicken when I was at Costco and shredding it. I used more of the seasonings than called for as the entire chicken went into the pan; for instance, I used 2 limes. I also chose to use cumin instead of oregano and shredded sweet onion instead of green. The flavor was mild but Delicious and I will Definitely be making this again. I served it with homemade salsa and guacamole and used cabbage instead of lettuce as it's more traditional and nutritional. Quickly warmed the tortillas Directly on the stove burners as I love the flavor it adds. Had both flour and corn tortillas on hand, tried one of each and found I liked the corn better. Good Stuff...thanks Marissa!! :)

Grilled Salmon I

Easy and flavorful. Marinated it for hours to let that flavor get in there. Served with sauteed green beans that I added a little soy sauce to and topped with sesame seeds, spinach salad and pasta. Was a big hit with the family and our guests! :)

Boilermaker Tailgate Chili

I halved the recipe as it was just for the family. Diced and cooked one slice of bacon before adding the other meats. The added the veggies, then beans, liquids and seasonings. Served it with corn bread and honey butter. Was told that this is the best chili I've ever made!

Awesome Slow Cooker Pot Roast

Very tasty! Used beef broth instead of water and added, Worcestershire sauce & garlic...after 4 hours on high, added carrots, potatoes and celery and cooked on low until serving, a few hours later. Tender delicious and flavorful...and a great smell to come home to after a long day! :)

Baby Back Ribs

I followed Cathy M's tips, as I wanted to finish ours off on the grill too and even though the ribs only marinated in the spice rub for a couple of hours and I accidentally had the oven at 325 degrees instead of 300, they turned out...Fantastic!! Even my Father-in-law, who isn't a rib fan, really enjoyed them! :)

Hummus III

Usually when I make hummus, I don't use tahini, as it's pretty fatty, but I decided I wanted to try making a more traditional hummus this time. It was quite tasty and our company liked it. I didn't see enough difference with the tahini to make it worth the fat to me. It's fun to mix it up with the hummus sometimes and add cilantro, jalapeño, sun dried tomatoes, roasted red peppers, cayenne, green chilis or any number of things that coordinate with the meal or whatever you're taste buds are asking for. :) Served it with sliced up veggies of carrots, red peppers and celery.

Chile Garlic BBQ Salmon

I'm Not a fish person, but we were having company that Loves salmon, so I decided to brave it. This turned out very nice and got Rave reviews...and even my son and I found it pretty tasty. :) I mixed the ingredients together in a bag and let the fish marinade for about 30 minutes before Hubby put it on the grill. Served it with fettuccine n asparagus in a lemon cream sauce, green salad and watermelon. It was a Big hit! :)

Chicken Cordon Bleu II

It can be tough to find a recipe that Everyone in the house likes...but this did it! :) I made a couple changes in my efforts to assure this...after pounding the breasts thin and rolling them with the ham and cheese, I coated them in Panko bread crumbs that I'd seasoned as directed. Browned them on all sides, then put them in a 350 oven for 20 minutes. I made the sauce separate, as directed, except that I added some garlic and Parmesan cheese. The breading of the chicken and keeping the sauce separate was done to keep the kids happy. They did put a little sauce on the side. Served with with rice pilaf and steamed broccoli. Was a big hit and I'll definitely make it again! :)

Mom's Macaroni and Cheese

I needed to find another mac n cheese recipe, as I didn't have something I needed for my standard. We found that this to be tasted pretty much the same...very tasty! I used more cheese plus threw in a 3rd kind that I happened to have in the fridge. I also crushed some crackers for the top, instead of bread crumbs and topped that with some paprika. Next time I think I'll add a little hot sauce too. Just a few drops to add a little flavor/kick. Very tasty recipe...it was gobbled up! :)

Awesome and Easy Creamy Corn Casserole

Very tasty and a Big hit! Made a double batch, as we had company. Easy and delicious...will definitely make this again. Next time perhaps with a Mexican themed entree and add a can of diced green chili's. :)

Kung Pao Chicken

This is my husbands favorite dish when we go out, so I wanted to try it at home. This was Very good. I'd double or triple the sauce. I also added veggies...red pepper, zucchini and celery. Cooked the 5 marinated chicken breast halves, then cooked the veggies (all at high heat), then added the chicken breasts pieces back and poured the sauce over the top. Served over rice. Yum!

Easy Mint Chocolate Chip Ice Cream

Easy and tasty. Think next time I'll shave a chocolate bar into it though as I like the chocolate taste without such a hard crunch. Just personal taste. Also, had it in the freezer for about 5 hours and it was still Very soft. Very tasty though! :)

Granny's Banana Bread

I followed the recipe exactly except that I keep my flour premixed 1/2 white and 1/2 wheat. Used one of those single serving applesauce cups as it seemed about the right size. I set the timer for 50 minutes as it said 45-60 minutes and my oven tends to run slow. Wish I'd have set it for 45 minutes, as it could have come out a couple minutes earlier. Still, quite yummy!!

Too Much Chocolate Cake

3/22/10 update: Made it again but got to taste it this time...Yum!! First time I made it I just sprinkled powdered sugar on top. This time I melted some chocolate with some creame to create a sauce to drizzle over it...delicious, nice looking and easy...what more can you ask for! :) ~~~ Made it for a friends birthday...didn't get to taste it as we dropped it off, but got rave reviews. Made it as directed with no variations. Have a feeling it would have gotten 5 stars if I'd have gotten to taste it, lol. :)
