Marinated Grilled Shrimp

This was so good! I didn't have tomato sauce, so I used some marinara sauce, but the taste was delicious! My husband, who isn't a big fan of shrimp, liked it as well. Definitely high praise from him. I really liked how the ingredients are things I always have on hand.

Rosemary Chicken with Orange-Maple Glaze

So yummy! The flavors blended really well, but I couldn't get the glaze to thicken up at all, even after 10 more minutes before I put it over the chicken. Not a big deal, just what happened. Will definitely make this again.

Creamy Chocolate Frosting

This is a great frosting! I wanted something less "stiff", so I only used 2 cups of powdered sugar. I'm sure it is just as good with the full amount of sugar.

One Bowl Chocolate Cake III

This is a great cake. Normally I can't bake to save my life, but I really wanted a chocolate cake. I had all the ingredients, and the only change I made was I used 1 cup of hot coffee rather than boiling water. It actually cooked in 25 minutes for me. Delicious and moist!

Spicy Peach-Glazed Pork Chops

This makes a very nice glaze. It's good and I'll make it again. I wish I could give this a 3.5 star because I just don't think it's anything "special". I used 1 tsp of chipotle en adobo sauce because I didn't have any chile paste. The combination of sweet and spicy is really nice.

Pumpkin Chocolate Dessert Cake

To make this a bit healthier, I used evaporated milk instead of heavy cream. The cake is fantastic! It's moist and holds up well over a few days. I didn't make the caramel frosting, but made a vanilla drizzle. Will definitely make this again.

Easy Roasted Pork

I'd probably give it 3.5 stars. I reduced the sugar to 1/3 cup. I don't have ground ginger, so I used some jarred ginger. I found that a bit overpowering, but that was a change I made. I did add some thinly sliced onions to balance the sweetness. Overall, it was a nice recipe.

Delicious Raspberry Oatmeal Cookie Bars

Really, this is a 3.5 star. I don't know, it didn't turn out the way I was expecting after reading all the reviews. It was almost more of a crumble rather than a bar because it wouldn't hold together. Maybe I should have melted the butter to make a more solid crust? Flavor was good, but I think I should have added a touch of cinnamon.

Rosemary Roasted Pork Tenderloin

This is a 4.5 star for me. Like others, I used apple juice and a bit less garlic. I only had time to let it marinade for 2.5 hours and it was still delicious. The meat was very moist. This is a keeper!

Adobo Sirloin

I made this with flank steak. Since I only like a little bit of spice, I left out the whole chipotle pepper and only used the adobo sauce. However, there wasn't really any liquid to cover the steak with. I guess it's supposed to be more of a rub than a marinade. I wanted a marinade, so I added 1/4 cup tequila and 1/2 cup of beef broth. The flavors were good.

Maria's Stuffed Chicken Breasts

I really think this is a 3.5 star, but I wanted to be generous. After reading so many raving reviews, I thought this would be much better. Don't get me wrong, it's good, but not worth the time. I used fresh spinach sauteed with 2 cloves of garlic, I added some extra herbs, salt & pepper to the ricotta mixture, and I seasoned the chicken breasts. Still, it was not impressive. And a whole lotta work to stuff the chicken breasts. In the end, the result was just okay and I won't be making this again.

Fudgy Peanut Butter Brownies

So good! I had a box of brownie mix I had to use, so I just used the peanut butter filling and frosting parts of this recipe. However, I did make the brownies with applesauce and egg substitute. Absolutely yummy! My husband was very happy.

Fluffy Pudding Frosting

This was great and easy! I really dislike overly sweet frostings, so this was perfect. I did have some problems getting it to spread well, but that might have been a timing issue. I had to make the frosting before the cake was completely cooled, so it sat in the fridge for a while before I frosted the cake.

Guinness® Corned Beef

Sadly, I have to say I didn't enjoy this recipe at all. After reading previous reviews, I reduced the sugar to 2/3 cup. It was still exceedingly sweet. The meat was tender, but the flavor was not what I expected after reading all the reviews. My husband, who has never had corned beef before, didn't like it at all.

Sugar Snap Peas

So good! I just made these tonight. I don't have shallots, so I used 1/2tsp of garlic. I cut back on the oil just a bit. And like others, I just tossed all the ingredients in a bowl and put them on the baking dish. The cooking time is perfect for still crisp peas. Thank you!

Slow Cooker Rosemary and Red Pepper Chicken

This is good, but with modifications. After reading other reviews I added more liquid, specifically: 1/2 cup of white wine, 1/2 cup pasta sauce, 1/2 chicken broth. I think the flavor of the sauce was really good with all the herbs. But I cooked the chicken for only 3 hours on low and it was dry! Bottom line, it's a decent recipe and we'll eat the leftovers, but it's not going to be put in my regular recipe rotation.

Apple Crisp II

I wish I could give 4.5 stars. This was a delicious apple crisp. I halved the recipe and it fit perfectly into an 8x8 pan. I used half brown sugar and half white sugar on the apples. I had cut the water two tablespoons, but after baking it was definitely too runny. Next time I'll leave out the water or add more flour to the apples. But the flavor is definitely right on. It was my husband's first time having apple crisp and he is a big fan of it now!
