I have yet to find a perfect recipe for peanut butter cookies.. most have turned out too dry or with too little peanut butter flavor.

Pat's Potato Salad
Turned out sooo good. Didn't like larger chunks of fresh parsley, so I would use dried flakes, also for ease of use.. I recommend to make this the night before and stir well before serving. Sooo yummy!

Cornbread Muffins I
Would give 5 stars but wish it were a little more fluffy than dense.

Roasted Vegetables
Love this recipe whether it be in the summer or in the fall with extra squash! Fresh herbs are a must.. I doubled this recipe and served with a dry-rub slow grilled set of baby back pork ribs and it was all gone once the company left!
