Camping in the White Mountains
About this Cook
I share a small home with my dog, Mollie and my cat, Mikie. I am an accountant for a local company and, I love my job! In my spare time, I love to go camping in the mountains with my very best friend in the world. I am active in my Church and, volunteer in a veterans' home once a month.
My favorite things to cook
Since I live alone and don't have company too often, I make a couple of casseroles each week and freeze them in small portions to eat for lunch and dinner. My passion, however, is baking. I love to bake fresh bread when I have time and, recently I have been trying new cookie recipes. These experiments are consumed with great pleasure by the residents of a local veterans' home when I visit and, of course by myself and my best friend-other half.
My favorite family cooking traditions
My mother was the ultimate home economist. She never wasted a thing and, could make terrific meals out of any assortment of leftovers. I try to emulate her but, I don't come close!
My cooking triumphs
I would have to say that my fresh baked bread (from scratch - no bread machine!)is the best thing that I make. I make an oatmeal-cornmeal yeast bread that is out of this world!
My cooking tragedies
I don't think I have ever had a real cooking tragedy but, one time, I did enter the kitchen to find my cat on the counter calmly consuming the chicken I was just about to put into the oven to serve to guests. I threw away the chicken the cat had "gotten to" and stretched the meal somehow.

Almost Stuffed Peppers
This was good, but I found it to be a little bland. The only change I made was to add some minced garlic. I think I might try serving it with tomato sauce and shredded cheese on top. It is good though, and I'll make it again - kicking it up a little.

Chinese Cabbage Salad I
This is definitely a keeper! I was looking for something I could bring to a pot-luck on short notice with not much time to cook, and this was perfect! It was quick, easy and delicious. I didn't know what to do with the seasoning packet that came with the noodles, so I threw it away. I think next time, I'll follow the reviewer's idea of sprinkling it on the cashews and noodles as they toast. Anyway, thanks for this recipe!

Catherine's Spicy Chicken Soup
This was good, though I did modify it a little. I left out the salt and cut back on the bouillon (3 cubes) and chili powder (2 T). Also, I had some leftover chopped green bell pepper, so I threw that in. Next time I make it, I will go with all diced tomatoes. I agree with other reviewers - those whole tomatoes seem a little out of place. It's a good soup for a cold day! Thanks!
