Pecan Pie V

This was my first time trying and making pecan pie. It was a success. If I ever make it again, I will use this recipe. Preheat the oven to 350 and bake for 15 minutes. Turn down the oven to 300 and bake for 50 minutes.

Sweet Coated Pecans

The Real Mojito

Great recipe. I let the lime, sugar and rum sit for a good hour before finishing the drink. I think that was part of the trick. Also, I used Bacardi light rum.

Guacamole

This recipe is great. I used red onion and forgot the cilantro. It still turned out pretty good. Although, I'm not sure if a full tsp of salt is necessary. I will make this again in the very near future.

Oatmeal Peanut Butter Cookies III

This is a quick and easy recipe. A few tips: ensure the butter is room temperature, if you use SALTED butter there is no need to include the 1/2 tsp. of salt, use a medium cookie scooper, and only bake the cookies for 9 minutes.

Smokin' Scovilles Turkey Chili

This recipe is pretty good but not exceptional. I reduced the heat by using chili powder and used regular diced tomatoes. I do think the corn was a nice addition. I'm not entirely convinced that I will make this again.

Chex® Muddy Buddies®

Great recipe; kids and adults love this treat. I only make about half of the recipe most of the time. Things to note, I usually put the cereal in a food storage bag and then I pour the chocolate/vanilla/peanut butter/margarine mixture in the bag and mix it all together. I then pour a little over a cup of powdered sugar in the bag and mix. If I make the whole recipe I usually use about 2.25 cups of powdered sugar.

Buttery Soft Pretzels

I enjoyed this recipe; it's hard to say that this really tastes like a soft pretzel. Nevertheless, the flavor is good. Things to note: only use 4 cups of flour and reserve some of the 4th cup to to use when kneading the dough; spread butter over the pretzels while the pretzels are cooking in the oven and again when the pretzels come out of the oven, and cook the pretzels in batches at different temps. 450F may be too hot.

Quick and Easy Chicken Noodle Soup

Update: This recipe does not freeze well. Changed rating from 4 to 3 stars. I'll probably stick with the canned stuff for this reason. Original rating: This is an easy and quick recipe. I didn't measure anything and it still came out great. Here are my modifications (bear in mind I halved the recipe): Add more onion and noodles; saute the onions, celery, and carrots in the butter until almost tender; use 1 can of 33% less sodium chicken broth, 1 can of regular chicken broth, and a 1/2 can of vegetable broth. I hope this helps.

BBQ Pork for Sandwiches

This is a really great recipe. I recommend using Big Al K.C. bbq sauce recipe to make this outstanding. Like others I used a 4lb pork roast butt and it worked out perfectly. Also, I would recommend cutting the cooking time to 3.5 hours since you will baking it in the oven for another 30 minutes.

Cream Cheese Pound Cake I

We really enjoyed this recipe. Definitely take note of other reviews. Beat the butter, cream cheese and sugar until nice and fluffy (about 5 minutes). Should you halve the recipe the following modifications may be helpful: use 2 teaspoons of vanilla extract (in lieu of the almond extract) and cook the cake in a 9X5 loaf for 1 hour and 15 minutes.

Big Al's K.C. Bar-B-Q Sauce

This is certainly a sweet BBQ sauce but absolutely tasty. I did make some minor modifications: 3/4 cup red wine vinegar, no liquid smoke, 1/4 tsp of celery seed, one small grated onion, and a pinch of cayenne pepper. I also brought the sauce to a low boil and then turned it down to simmer for about 30 minutes. Enjoy! Update: Sometimes I like a sweeter sauce so I decrease the cayenne pepper to a pinch and add 1 tbs of brown sugar (half recipe). Update: I've cooked this several times and I have come up with the following modifications (this is for half of the recipe). Use 1/2 cup and 3 tbs. of brown sugar, no cayenne pepper, a little less than 1/4 cup of red wine vinegar., a little than 1/2 tsp of pepper, and a 1/4 tsp of celery seed.

Seven Layer Taco Dip

This was my first time making this type of dip and it turned out quite well. I did make a few minor modifications which I strongly recommend. The changes are as follows: 1)Add half of the taco mix to the beans and add the other half of the mix to the cream cheese and sour cream mixture. 2) Leave out the lettuce, green onions, and tomatoes. 3) In place of the letteuce, green onions, and tomatoes add guacamole. The guacomle should include onions and tomatoes mixed in (use one of the highly rated guacamole recipes on this website). 4) Layer the dip in the following order: beans (bottom), cream cheese/sour cream, guacamole, salsa, and cheese (top).

Dirt Cake I

This recipe is a favorite for children and adults! I'm not sure if it's necessary to add the butter/cream cheese/sugar mixture to the pudding mixture, therefore, next time I'll try making it without it.

Mom's Zucchini Bread

This was my first time every making or eating zucchini bread and it turned out pretty well. (Honestly, it tasted a lot like carrot cake to me.) I only made half of the recipe but used about 1.25 cups of zucchini. Lastly, I made 6 large jumbo muffins and cooked it for about 36 minutes, the last 2 minutes the oven was off.

Brooke's Best Bombshell Brownies

This is a good basic recipe. I think I prefer cake-like brownies and that's probably why I'm only giving it four stars. Should you only want to make half the recipe I would recommend using a 9X9 pan and cook the brownies no more than 30 minutes.

Gourmet Mushroom Risotto
