The Best Rolled Sugar Cookies

Make sure that you put these in the fridge before cutting, otherwise, you have pretty sticky dough. Also, I would suggest making these about 1/2 inch thick, as 1/4 inch thickness resulted in a lot of breakage. We used 'The Sugar Cookie Icing' recipe from this site for decoration, and the kids loved "painting the cookies". They now beg to do this on every holiday. We originally used these to make Father Day tie cookies, and he LOVED them. :D They weren't too sweet, or too dry.

Grilled Brown Sugar Pork Chops

I give this a four star because my kids did not like the sauce (they thought it was waaaay too sweet). My husband and I enjoyed it immensely, and couldn't wait to gobble up the leftovers. :D What we did differently due to our picky eaters is to place the sauce in a gravy boat and let everyone choose if they wanted the sauce or not. Weirdly, the kids loved the sauce on top of their salads. Go figure. Enjoy!

Spiced Pumpkin Seeds

These are tasty and addictive. HOWEVER, they are VERY salty and greasy. Everyone who became hooked on these had cracked lips after day #2, and the kids didn't want them at all. I roasted some pumpkin seeds with just a sprinkling of salt later in the week, and the kids scarfed those down.

Split Pea and Ham Soup I

This was tasty. I didn't have a ham bone, but I did have the ham, so I added some to the mix. YUM! I don't like split pea soup, but this is perfect for that cold day. I served it with wheat rolls, and it was a hit for everyone who doesn't care what color their food is. :D

White Chocolate Macadamia Nut Cookies IV

These were very easy to make. I gave it 4 stars because they were a little crispier than I would have liked. I made two batches, and in modifying the cooking time, they were either crunchy or raw in the middle. Having said that, everyone who I gave them to as Christmas presents asked for the recipe! My husband absolutely loved them as well, and has requested that I do as another member, and keep some frozen for a cookie or 2 at a whack in the toaster oven. :D Thank you so much for the recipe! It is now a part of my Christmas cookie collection.

Baked Omelet

This is an absolutely easy and wonderful recipe! I made it for dinner for my family trying to use up the leftover spiral ham from New Years. MMMM! I did it exactly as the recipe is stated. My husband sauteed some mushrooms to put on top. I served it with some rolls and asparagus. Very tasty! Next time I will be adding some veggies to the base to see what happens. The minced dried onions made it through my picky eaters, and they have asked me to make it again tonight! :D

Chicken Cordon Bleu II

This was superb! Easy to do with all of the ingredients on hand, but I think would be expensive otherwise. My husband wants me to cook this for any company we have in the future. I served it with wheat buns, salad, peas and asparagus (we have picky eaters when it comes to green food). As for modifications: I used my leftover spiral ham from New Years for the middle. I pounded my chicken down to 1/2" thickness. I folded the chicken over in half over the ham and cheese, and it worked fine. I baked it in the oven in a 13x9 glass pan @ 350' for 30 min. I then added the wine mixture and covered it with foil for 20 min. I then transferred the chicken to a plate, added the cream mixture and thickened on the stove top. BIG HIT!

Flatlander Chili

I don't like chili, however this is really good! It makes a TON of chili, so if you are feeding your family, I would cut it in half. I kept a small container for leftovers, but have 2 LARGE throw-away freezer containers in the freezer. I served this with cornbread, cheese, and sour cream. My kids weren't too into it, as they thought it was spicy. I'm a spice wimp, and I thought it was just right. I didn't have cayenne pepper available, so I added a touch more chili pepper to the mix. I also added the 1/4 C of cornmeal suggested by another member to thicken it up, and it was the right consistency. Thank you for such a great recipe! I'm thinking of adding a little chocolate next time. That's what a lot of my friends here in TX add instead of sugar.

Sugar Coated Pecans

YUM! My 7 year old made these for me on Thanksgiving day for an appetizer (I did the stirring in the oven)! We were munching on these non-stop all day long. Ironically it was my 7 year old who did not like them, but then she doesn't like nuts at all. These pecans are so evenly coated that my guests were asking me how I did it. This recipe is too easy! Thank you for a great recipe!

Rosemary Chicken with Orange-Maple Glaze

Oh my gosh this is SO GOOD! I found that I should have made double the amount of chicken, because my family couldn't get enough of it. It has been requested from my 2 kids who are opposite on everything they love. I followed the advice of one of the other reviewers. I reduced the orange juice to 3/4 Cup, divided. I went ahead and added 1 Tblsp cornstarch to 1/4 C orange juice, and added that mixture to the glaze sauce simmering on the stove once I flipped the chicken over. I boiled it for about 3-5 minutes more, and the glaze thickened up beautifully. :D The glaze could actually work with 4-6 chicken breasts with this reduction depending on the size of the breasts. Lastly, I served this with white rice, green peas, and finished it off with a Chocolate Pudding Cake (served with vanilla ice cream) from this website. Enjoy!

Hot Fudge Pudding Cake III

I followed the advice of others on the amount of water to add (1- 1/3 Cup), and forgot to add the vanilla. I'm going to try this again, as it's EXTREMELY EASY to make, but will have to add the vanilla. It was lacking something. Since this already has a lot of caffeine, I did not add the coffee instead of water. I think I will try it, and make 2 batches. One for the kids, and one for us. Either way, my kids scarfed this down in one sitting. Enjoy!

Slow Cooker Bananas Foster

This get's 5 stars from me, because it took me all of 7 minutes to put together, and that was with interruptions from a 2 year old! :D I had to share some of the bananas and all was good with the world again. Now with the recipe, I used Jamaican Rum, but omitted the coconut and walnuts because of picky eaters. EVERYbody LOVED the syrup this created. My 2 year old kept trying to bring the bowl up to her face to lick the inside. Also, for all of the mom's out there with little one's like me, you will need to clean your table ASAP after this dessert, because it is extremely sticky. :D Enjoy!

Sam's Famous Carrot Cake

I made this for my husband's birthday. He REALLY loved it. I'm giving it 4 stars because my kids did not like everything in it. I made it two times following the recipe exactly the same. For some reason it came out fairly dry the second time. Ah well...the flavor is worth the shredding of the carrots. I used the Cream Cheese Frosting II on this website. Yummo!

Mandarin Orange Chicken

This was pretty quick and easy. My kids liked it ok, but the hoison sauce really took over the flavor. I will be adding some orange zest or something to get a more citrus-y tangy flavor, as that is what we were looking for. I served rice and fresh green beans with this. Very tasty and filling. Thanks!

Chicken Souiza Cornbread Bake

We liked it! Since we have small children, I omitted the peppers to the mix. I also found that a whole 16 oz mix of Marie Calendar's cornbread mix was good, but made it too dry (my daughter poured in the whole mix before I could stop her). :D I utilized the information from previous reviews and used the 2 eggs, the 1/2 C. of sour cream and a can of cream of chicken soup. I used fresh mushrooms as well. On the side, we used Ortega's mild green taco sauce. It really made it taste like Chicken Souiza. YUM! 4 out of 5 voters in our house said make it again!

Pepperoni Bread

This was soooo easy! I used two loafs of refrigerated french bread dough, and was able to freeze the second loaf for later in the week. I also used turkey pepperoni. My daughter doesn't like pepperoni, so we will be replacing it with Canadian bacon next time. Also my husband likes things more spicy than the rest of us wimps, so he requested a nice spicy marinara sauce to dip it in next time. :D Enjoy!

Breaded Parmesan Chicken

This is a fast, easy and tasty recipe! I made a box of stuffing into fine crumbs with a few pulses on my blender. I had enough of the Italian sesoning and stuffing mix to make 1 more batch of the seasonings (minus the fresh parmesan). So next time, it will go even faster. :D Lastly, if my son loves something, my daughter hates it, and vice versa. They both LOVED this chicken and asked for more. I served this with peas and biscuits, and it was requested again the next day. :D Enjoy!

Breaded Ranch Chicken

The ranch dressing gave it too much of a kick according to my kids. Other than that, I thought the coating came off rather easily. I will cut down on the butter next time, or cut the chicken into smaller pieces.

Mini Cheesecakes I

I love this because it's so easy to make. I did not crush the cookies the second time I made these, and it created a better "plate" with which to hold the treats. They are quite messy to eat, so have napkins ready! :D What a problem to have.

Tangy Citrus Chicken

This is from the 1999 edition of the cookbook, and boy it's a favorite in our house! We make it at least 1-2 times a month, it's that simple. It is a sweet chicken recipe that we serve with a salad and plenty of crusty bread. We use the leftover juices and dip our bread into it. My picky 5 and 7 year old would eat this everyday if I let them (they prefer this to mac n cheese or chicken nuggets!!!). I usually only use 3-4 chicken breasts. If you are making 8 chicken breasts, then double up on everything else for the pour over marinade. Lastly, I utilize leftover chicken for salads, and it's great! Enjoy this very simple dump and go recipe!
