Quick Chinese-Style Vermicelli (Rice Noodles)
LOVE this recipe!!! It is so quick and easy, and it is delicious!! Taking the suggestions of others, I doubled the garlic, chile sauce, and soy sauce. I omitted the green peppers. I was looking for an easy noodle dish with Asian flare, and this is it!! My advice is to mix the chile sauce, soy sauce, and salt/pepper with the noodles in a large mixing bowl. Even with my largest skillet, there wasn't enough room. Also be prepared for this recipe to yield a HUGE amount of noodles. I had leftovers for days, but they were still good!

Mexican Sour Cream Rice
This dish is AWESOME!! I have NEVER had anything this good, not even at some of my favorite Mexican restaurants. We left out the cilantro since we're not big fans, and used 1/2 a can of diced tomatoes with green chiles (drained)...FABULOUS!!!! The flavors just melt together perfectly, with just the right amount of heat. I could not get enough of this, and this is now a favorie side dish in our home!!!

California Chicken Spaghetti
This is a highly requested meal in my home. I was concerned about the spices used in this recipe, but believe me, it is just right!! I love the spicy flavor of the Cajun seasoning combined with the diced tomatoes and cool, tangy Feta cheese. It is a real crowd pleaser, and there are never any leftovers. This is the perfect flavor escape from plain spaghetti. Note: I enjoy adding extra diced tomatoes to the dish.
