Favorite Old Fashioned Gingerbread

As far as taste, I didn't care for this. But if you take my personal preference out of the equation I would rate this recipe a success. I added 1/2 c applesauce and doubled the spices like others mentioned. The cake was very moist and had a great texture and color. Turns out I'm just not a fan of gingerbread "bread"- but I do love the cookies! Go figure!

Baked Potato Soup

This was very tasty. Nothing bland about this. I used 4 cups chicken broth, omitted the hot sauce, used whole milk instead of half and half and added an extra strip of bacon...or two. ;-)

This is so good! I think the batter could be used for many different chicken recipes. It's a very delicious batter. The sauce is also very good. Not too sweet.

Mexican Casserole

Very delicious! The crunch from the chips really make this dish! *I added white rice to the bottom of the dish along with chicken stock/water. The rice was still alittle hard after baking the recommended time. Will increase time 5-10 minutes next time.

Mango Corn Salsa

Used this to top the Marinated Tuna Steak recipe on this site. It was great! I used one whole serrano pepper and removed the ribs and seeds on the other two and was plenty hot for us. Might reduce the cilantro in 1/2 next time.

Marinated Tuna Steak

Made this with the Mango Corn Salsa on this site. It was delish! Seared on a pan for 6 minutes per side, flipping every 2 minutes. I cooked my husband's and kids' pieces until done all the way through. They all loved it- which is a HUGE deal at our dinner table! Will make this again and again!

Lasagna Alfredo

Very yummy! My changes: I sprinkled the chicken with garlic powder, onion powder, salt and pepper and then sauteed in a pan. I substituted one bottle of alfredo sauce with 1 small bottle of Rao's marinara sauce, which I drizzled over the spinach mixture and on the top noodle layer. I used 1/2 whole wheat noodles and alternated between white and wheat when laying down the noodles. I also used 1 pint whole milk ricotta and 3/4 of a small container of reduced fat cottage cheese. I added a sprinkle of Italian seasoning to the ricotta mix / cottage cheese / spinach mixture. This was so good and a little less indulgent. I don't believe I used even 3 cups of moz. cheese. This is definitely going into the "rotation"!

Chicken Angelo

I browned the chicken before baking it in the oven. It came out of the oven looking fabulous. The cheese melted to a wonderful warm brown color. It was a bit lacking in flavor for me. But all the boys (ages 4-33) said it was good....so, it's a keeper for sure!

Sloppy Joes II

I grew up without ever eating sloppy joes. So when I had my first one I was excited. It was a Manwich and it was awful. I have never had one since. Now that I have two boys who have had sloppy joes at school (and loved them), I am on a hunt for a good recipe. This is it! I followed some other person's advice and only used 1/2 c ketchup and 1/4 c bbq sauce and omit the brown sugar. I pureed the onion and bell pepper in a blender before adding it to the beef. My boys don't like the veggie looking stuff so I had to be a little sneaky. I ate mine with toasted corn tortilla chips (kinda like a chili) and it was fabulous.

Italian Spaghetti Sauce with Meatballs

Very good. The sauce was richer, I believe, because you render the fat from the meatballs. It adds a great flavor and thickness to the sauce.
