About this Cook
I am a stay at home mom with 2 little boys. Dinner time can be a challenge when trying to "accomodate" 2 kids and a hubby. I try to just make one meal that everyone will love. But sadly, what they liked last week is not a guaranteed winner next week.

I love to bake all things yummy! I don't bake as often for fear of eating it all!
My favorite family cooking traditions
Lefse- it is an all day process. Eggrolls- my mom's recipe is awesome. Everytime I make them I am reminded of all my family parties.
My cooking triumphs
Chicken cordon bleu (from this website).
My cooking tragedies
Baking a pumpkin pie after forgetting to add the sugar. Baking a pumpkin pie (on another occasion) and forgetting to remove the pie crust paper lining, that separates the two frozen crusts. Nothing like a little extra fiber in your pumpkin pie.

Mexican Casserole
Very delicious! The crunch from the chips really make this dish! *I added white rice to the bottom of the dish along with chicken stock/water. The rice was still alittle hard after baking the recommended time. Will increase time 5-10 minutes next time.

Mango Corn Salsa
Used this to top the Marinated Tuna Steak recipe on this site. It was great! I used one whole serrano pepper and removed the ribs and seeds on the other two and was plenty hot for us. Might reduce the cilantro in 1/2 next time.

Marinated Tuna Steak
Made this with the Mango Corn Salsa on this site. It was delish! Seared on a pan for 6 minutes per side, flipping every 2 minutes. I cooked my husband's and kids' pieces until done all the way through. They all loved it- which is a HUGE deal at our dinner table! Will make this again and again!
