Russian Mushroom and Potato Soup
Not only did this soup tast great, I also appreciated how easy it was to make. It only took a few standard ingredients, basic cooking skills, and a short prep time. This made the soup a reasonable dinner for me to cook just for myself.

Polenta
The flavor was was rather bland. Next time I will try adding salt or some type of flavoring.

Italian Summer Squash Polenta Bake
This wasn't as flavorful as I had hoped when I first tried it. I will add more spices next time. However, when I reheated the leftovers the next day, it tasted wonderful.
