Colcannon Irish Potatoes
This was delicious. I used the water that corned beef is packed in to boilnthe vegies and it came out superb. I also used low fat yogurt spread instead of butter to keep it healthier. It was an instant hit.

Sauteed Mushrooms in Garlic
Yummy- we practically licked the bowl clean. Used red wine and it was wonderful!
