Ukrainian Red Borscht Soup
I followed the recipe but added aged vinegar instead of sugar and used dill instead of parsley as someone suggested. This is a real winner and one I will make again and again! In addition, it is low in fat and high in fiber! This really works with my lifestyle and freezes well too.

Zucchini Yogurt Multigrain Muffins
Heavy like a brick, but good flavor. freezes well but would not make again.

Easy and Delicious Chicken and Rice Casserole
The chicken was dry, and the rice took a long time to cook- I ended up adding water twice to have enough liquid. I would not make it again. It was edible, but not memorable.
