To Die For Blueberry Muffins

I made these muffins yesterday. They didn’t come out exactly right but it was my fault. I wanted to use buttermilk instead of whole milk but I didn’t have any in the house so I used a powdered buttermilk combined with water. Big mistake!! I put frozen blackberries in because that’s all I had. I also used a regular muffin tin because I don’t own the jumbo kind. I got 18 muffins from the mix by filling each cup ½ full. The muffins rose just below the level of the paper cups. In the first 12 muffins I forgot to add oil. I did add about 2 ozs of applesauce but that wasn’t enough, evidently. I also forgot to put the topping on the first 12. I made cinnamon and sugar and then put it on after they came out of the oven. Another big mistake!! I put some oil in the last of the dough and made 6 more. I put the topping on them and they came out alright except they weren’t very big. The paper cups seem quite small. The cups in the pan seemed larger. I have one question I ’d like someone to answer. When you use the paper cups do you spray oil inside the paper cups? The dough sticks to them pretty good. I also reduced the baking powder as you would for high altitude. Another big mistake!! Next time I will use real buttermilk, the full amount of baking powder, and put more dough in each cup. I ’ll use oil instead of using any applesauce. The texture of the first batch was coarse and the second with the oil added was fine textured. But they tasted go

Chocolate Waffles I

For some of the people who said they couldn't taste the chocolate flavor, try using chocolate milk instead of white milk and also use the Hot Chocolate Sauce that came with the Gingerbread Waffles. Update: I made these waffles this morning and used a European Style of Cocoa, chocolate milk, and 1/2 t. cinnamon, to enhance the chocolate flavor. I don't think I really needed that cinnamon. The cocoa was strong enough added to the chocolate milk. They were really cholatety. But next time I will try it with white milk and no cinnamon to see if that cocoa is strong enough.

Malted Milk Waffles

My wafflles turned out GREAT! I was in a bit of a hurry so didin't separate the eggs and just put them in whole. The waffles still turned out very fluffy. I also used buttermilk powder and water instead of fresh buttermilk. You put the buttermilk powder in with the dry ingredients and then put the water in with the wet. You don't make up the buttermilk first. I will definitely make this recipe again.

Chai Tea Mix

I've never had Chai tea before so I don't know if mine tastes as it should. I halved the recipe as I didn't know if I would like it. I haven't as yet run it through my food processor. I thought it was already fine but maybe I am wrong. I just tasted like milk with some spices in it. I didn't cut down on the sugar but it wasn't very sweet anyway. I went to a health food store and bought the cardamom by the tablespoonful. It's much cheaper that way and is much fresher. I didn't add the extra spices because on my copy of the recipe which I printed on 3/21, it didn't mention them. I will try adding them now.

Lemon Barbeque Meatloaf

This recipe sounds terrific!! I have a type of muffin pan that makes small loaves instead of round muffins. I'm going to use this. I print the recipe and then look at the reviews and make notes on the side of the copy of the recipe. I would like to suggest to the person responsible for this web site that they put high altitude adjustments on it. We don't all live at sea level.

Brown Sugar Meatloaf

I reviewed this recipe before I made it by telling how I’d do it in a Microwave Oven. I have since done it and will tell you the results. First, I used ground buffalo but only 1 lb. I used oatmeal instead of cracker or bread crumbs. Big mistake, will try bread crumbs next time. I reduced the water, another mistake, as you need to use more in a microwave. I used barbeque sauce instead of ketchup and mixed it with the brown sugar and put it on top. I also used the onion soup mix instead of an onion. I’ll try the onion next time. I will also save out some sauce to put on the meatloaf when eating. I cooked it for 20 minutes in the microwave. That was too much time. It was done but the top got kind of hard. Hope this helps anyone who tries the microwave method.
