Vegetarian Four Cheese Lasagna
I left out the pasta sheets to lower the carbs in this recipe. Excellent dish and nice way to use eggplant! Will definitely make this again.

Quinoa Tabbouleh
With the changes I made, I give this 5 stars - we loved it! I used 1/2 cup red quinoa and 1/2 cup green lentils. I followed reviewer suggestions and added a little cumin and garlic. Delicious side dish to grilled meats this summer.

Swiss Chard with Pinto Beans and Goat Cheese
We loved this recipe! Since I didn't have goat cheese, I used three little triagles of Laughing Cow Garlic & Herb cheese. This is a keeper!
