Peanut Butter Easter Eggs
My daughter and I made these for an Easter dessert this year and, what a hit! I doubled the recipe and gave some away as gifts--everyone raved. We used the toppings suggested and, also used toffee crunch, crushed cashews, and mini chocolate chips. All who tried said that they could definatley pass as store-bought. This recipe has definatley become one of our "Easter traditions" from this point on!

Mom's Stovetop Pork Ribs
This dish was fantastic! I made it for my husband and our friend and, both said it was restaurant quality food! I had to omit the Bay Leaves, simply because I had none,so I subsituted Marjoram and Thyme. I also reduced the Soy Sauce(I had to use half Soy, half Worcester Sauce since I had only a bit of Soy) to 1/4 C but, next time I will reduce that in half. I found it a bit salty but, the Men loved it! I also found that the cooking time is more true to 1 1/4- 1 1/2 hours for the water to reduce but, I think the longer it simmers, the better it tastes! The ribs were still incredibly moist. Thanks to all of the advice from previous reviewers! Your tips were definatley considered and used! Will absolutley be making again

Funky Enchilada Casserole
I love this recipe, as does all of my family and friends! After making this a few times, I have added some things. I grate one large onion into the Chicken which adds some juiciness to the mixture! Along with the Cumin and pinch of Cayenne pepper, I use my own mix of spices' instead of a Taco seasoning-Chili Powder,Paprika,Garlic Powder,and,Salt to taste. The last time I made this, I didn't add the corn but, put in one large fresh tomato. I used 6 Whole Wheat Tortillas and just cut them to fit the bottom of my casserole dish. The Whole Wheat ones add a nice texture to the dish-- they become softer than the flour or corn tortillas.After baking, I added a ton of fresh Cilantro and, it was fantasic!
