I decided to use this recipe for chocolate chip banana muffins so that they'd be easier to eat outside. After I put my muffin tins into the oven, I realized I had forgotten to add the eggs! I expected the worst, but these still came out great. They were moist, with a nice crisp to the top. Accidentally vegan, and they were very well received!

These were really good warm. I'm a butter fanatic, so I would suggest using a bit more. I did a couple coats of garlic butter and that worked nicely.
