Blueberry Zucchini Bread
An unbelievable zucchini bread recipe. I even subbed 1/2 cup applesauce for 1/2 cup oil to make it lower fat and it was SO moist! I also used frozen raspberries instead of blueberries. My kids love this recipe. I did muffins, baked 35 minutes; and a large loaf, 1 hour, 20 minutes, at the same time. Everything was perfect! Thank you!

Broccoli Fish Bake
My whole family loves this recipe. My 8 year old actually asks for it regularly. I used lowfat cream of chicken soup and skipped the butter but otherwise made it exactly as written. I can even use thin frozen fish fillets right in the casserole and just add 5 minutes. EASY and delicious!

BREAKSTONE'S Curried Mashed Sweet Potatoes
After making this I was shocked that no one had reviewed it yet! It is DELICIOUS exactly as written and incredibly easy. The curry is subtle enough for my 8 year old, yet interesting. I will make extra next time.
