Seven Layer Taco Dip
I put this on a large platter when serving. I do not use lettuce or green peppers. I do add cooked ground beef to the beans and I add the taco seasoning mix to the sour cream mixture. I layer in the following order..beans, guacamole, sour cream mixture, cheese, tomatoes, green onions, black olives. Great served with Frito Scoops.

Mini Cheesecakes I
I made these last weekend for a wedding reception and a school faculty party. I made a couple hundred. Some had cherry pie filling on top and the others had madarine oranges (for Chinese New Year). I used shortbread cookies for the crust. They were gone in no time. Especially popular with the men!!

Becky's Oatmeal Carmelitas
These are great. I only make one change. Instead of using caramels with the evaporated milk, I use a 17 oz jar of Mrs. Richardson's Butterscotch Caramel. I melt it in the microwave and it makes it so much easier than using caramels. You can find it by the ice cream in grocery stores like Kroger. The difference is amazing!
