Love to cook, love to eat
About this Cook
I am a busy mother of 3 beautiful but sometimes picky eaters. That does not include my picky husband! So sometimes getting meals on the table that all will enjoy can be frustrating. At least I usually enjoy my results.
My favorite things to cook
I love to cook soul food, Italian food, quick breads and desserts. I recently tried my hand at homemade bread, not the No Knead kind either. Was OK, but I'll stick with the no knead! I have lots of fun trying even if I don't always get it right.
My favorite family cooking traditions
For the holidays, my kids insist I make my special dressing (even though my daughter doesn't like it) and my mashed sweet potatoes. On New Years we like to have a seafood boil. We do like to eat out, I guess that counts as a tradition.
My cooking triumphs
Making good No Knead bread. I know it's easy, but what a sense of accomplishment to make your own bread, period. My greatest cooking triumphs include anything my dear husband will eat without complaint. He's just a picky guy, so I try to make things he will enjoy.
My cooking tragedies
I had a slow cooker recipe book and in it was this recipe for some kind of meat ball, using ground beef and rice. Was easy enough to make but when I tasted it....man oh man. Mushy, gross and straight to the trash can. Or trying to watch TV and make a beef stew. I can still see that black ribbon swirling thru my formerly beautiful stew.....

Brown Family's Favorite Pumpkin Pie
DELICIOUS!!!! Very easy to put together, an absolute no-brainer! This custard was very light, not heavy like traditional pumpkin pie filling, but had all the traditional flavor. I used graham cracker crust for my pre-Thanksgiving/Christmas test of this recipe and it fits the bill to a T! The only thing I added was a little bit of ground clove and a little vanilla extract. This is my go-to Pumpkin Pie recipe from now on. And the strudel really makes this pie special. For me, this recipe made two shallow (er)graham cracker crust pies. This recipe is to DIE for, forget all the haters that said it was too bland or not sweet enough!

Almost No Fat Banana Bread
For a low fat baked treat, this is really good....and I didn't even have enough bananas!! I used whole wheat flour instead of white and threw in a tbsp. of vital wheat gluten flour and a whole individual cup of applesauce (which is about 1/2 cup). I upped the cinnamon, used some nutmeg. Otherwise, I followed the recipe. This is a keeper!

Insanely Amazing Jalapeno Cheese Dip
Delicious!! Even my mother, who doesn't like mayo and dairy products, loved this dip. I only had the grated parm cheese in the green can on hand, and it tasted great! I will try it with shredded parm next time, and maybe a little crushed garlic!
