West Texas-Style Buffalo Chili
This was really good - i especially liked the black beans with the recipe. I don't know if it was because the pieces of zucchini were too big, but they stayed too firm and I'll probably leave them out entirely next time I make this. A great use for buffalo meat!

Ham and Broccoli Strata
This was really great - I left off a star since I did change it a bit to make the strata a bit healthier but the combination of flavors was great and it re-heats really well, which is a big plus for me!

Weekend Brunch Casserole
This was great - I made it with Southwestern eggbeaters, skim milk, low fat crescent rolls, maple turkey sausage and fat free mozz. cheese and it still turned out great! Just as tasty re-heated the next day, too.
