Pepperoni Stuffed Zucchini
My husband and I loved this and the kids were ok so we will have it again. I took other people's advice and added garlic salt, italian seasoning and I had 1/2 a tomato and cut that up and added to the pepperoni mix. Very yummy

Tomato Salsa
Yummy but I cut back on the celery to half the amount asked for. The green chilis gave it a great flavor. I thought it would be too hot so I cut back on the jalapeno, I should have used everything. My recipe was very flavorful but very mild.

Eggplant Tomato Bake
ok so I made a lot of changes but this is a great recipe by itself. I didn't have any parmesan but provelone was wonderful. I layered my eggplant then fresh basil a slice of tomato grind of fresh pepper and then the slice of cheese. I grilled the whole thing until the cheese was brown and bubbly. Fantastic!
