White Bean Chicken Chili
Absolutely delicious and ridiculously easy! I didn't have any canned tomatoes or green chiles, so instead I used about a 1/4 cup tomato paste and 1/2 cup verde sauce. I also subbed canned corn for fresh, as fresh is off season. I recommend using a *tad* more of the spices and also simmering for an additional 20 minutes to really let the broth boil down. Will be making this again!
