Easy Spicy Thai Slow Cooker Chicken

This had a really nice flavour, I followed recipe exactly, I was a little apprehensive of the heat of the thai chilli paste, I licked a little off the spoon, before I threw it in the sink, it was really Hot! But I went ahead and made. I had to use Kikkoman Brand Toasted Sesame Marinade, 345 ml size, as the kraft one mentioned is not available in Ontario, but I think this was comparable. I made the ginger/garlic paste as supplied, I couldn't find it in the store, I used boneless breast and bone-in skinless thighs (for more flavour). I left this on low while I went to work (I made the sauce the nite before and food processed it and stuck it in the frig), great smell when I got home. I took chicken out of pot and took out bones and roughly sliced and set aside. Turned up crock pot to high with lid on (10 to 15 min.), then I mixed about 2 tablespoons of cornstarch and water, and stirred this into sauce in the pot, it thickened up nicely. I used some Thai stick pasta (very thin pasta, that you just soak for 10 minutes in boiling water, drain and its ready) I mixed everything, including some green beans cooked to still crisp and mushrooms ) (Get those veggies into meals) This was excellent heated back up the next day, and the next day....

Slow Cooker Mongolian Beef

This is a great, delicious recipe, I omitted sugar, added mushrooms to sause and meat, and broccoli at the end, served this over rice, everyone loved it, even my picky kids

Penne in Vodka Cream

This was great, I did follow other suggestions, by cutting vodka to 1/2 c. and I used lite cream, I also add some fresh garlic to butter. This was so good, and reheats very well.

Light Wheat Rolls

I love this recipe, I have made it several times, and it always turns out great. I have also rolled out dough and brushed with melted butter and sprinkled with fresh garlic, rolled up and make garlic rolls. Yummy

Pico de Gallo Chicken Quesadillas

This was truly delicious. I used leftover chicken breast, that I put in at the end, just to quickly heat up. I replaced green pepper with orange pepper. I used the cheese I had on hand which was old cheddar. The trick with the plate works great. I heated the leftovers up the next day in frying pan, equally delicious!

Asparagus and Smoked Salmon Salad

This was good, the dressing needs more spice, I added 1/4 tea. dried dill after tasting original. I followed others suggestions and add mandarin oranges. Next time I will cube up goat cheese and add. I didn't have pecans so I used blanched almonds which I toasted. The asparagus does not need 5 min. it only takes about 3 min. so it is still crunchy.

Gourmet Mushroom Risotto

This turned out pretty good, I followed exactly,except I forgot to add butter at end,but it tasted great, I also used no fat chicken broth,and I pan fried asperagus with mushrooms, which I reduced the amount of, I used button and portobella. I will make this again, alot of work but worth it.

Lobster Soup

Wonderfull!! I made this with a couple of changes, I used lite margerine and I used 1% milk only, didn't add creme at end, also could not find celery flakes so I used 1 tea of finely chopped celery, I also used red onion as that was what I had, and simmered soup for about 1/2 hr, then cooled and reheated it later for dinner. This was yummy and I think fairly light, I had a couple friends for dinner and they loved it. I will make this again, thanks

Lemon Bars I

I followed recipe exactly! But did press shortbread bottom up sides. It was excellent. Cut in bars and refrigerate, untill cold, really easy to get out of pan.

Lighter Banana Muffins

These muffins turned out great, I took other's suggestions and changed sugar to splenda, used 4 bananas,2 eggs, 1 egg white, wholewheat flour,(I also added some bran), 1 tea. cinnamon, 1 tea. vanilla, and added chocolate chips to half the recipe, and baked for about 18 min.
