My Chile
About this Cook
I love to cook and I love to entertain. This web site is now our only form of cook book.
My favorite things to cook
Northern New Mexican cooking. I am from Santa Fe which is known for the food. I prefer green chile, NM style with the pueblo influences and consider myself a chile snob.
My favorite family cooking traditions
Home made mac and cheese. Always been a favorite and our "comfort food".
My cooking triumphs
I have tried a number of recipes on this site and have loved almost every one. Triumph....Blizzard of 2006....found three new recipes on this site that used what was in our house since the stores were sold out of everything including bread and milk. Creamy Herb pork loin, Kielbasa, onion and potato bake and a breakfast casserole with maple sausage. Yum, all are now part of our regular menu.
My cooking tragedies
Quiche with not enough flavor and runny in the middle. Now my husband is the quiche specialist.

Rempel Family Meatloaf
Very good flavor but seemed to not sit real well. A little on the rich side. Next time I won't use the whole package of soup mix.

Gulliver's Cream Corn
Amazing recipe. We followed it to a tee and it was outstanding. We used fresh milk and cream from the dairy and it was more like a main dish or dessert. To call it a "side dish" was an insult. People should follow the recipe before rating it, when you change it, add other ingredients and measurements, it is not the same recipe! I never add MSG and it is fabulous!

Pork Medallions with Balsamic Vinegar and Capers
VERY GOOD! Made it quick last night and served with roasted beets and polenta and it was AWESOME. Will repeat in our routine.
