Pumpkin Cream Cheese Muffins

Wonderful muffins! I made many of the recommended changes. I added more spices to the batter (1/2t allspice, cloves, 1 t nutmeg, 1/4 t ginger). It would have been bland without these. I used 15 oz of pumpkin, and substituted canola oil. Somehow I messed up the streusel. I may oats to it next time.

Buffalo Style Chicken Pizza

Delicious. I used left over "Buffalo Chicken Rolls", substituted blue cheese for blue cheese dressing and used a Pillsbury crust. I used Tabsaco for the hot sauce. Next time, I will go to the trouble to make my own crust. There will be a next time.

Buffalo Chicken Rolls

Delicious. I made some very small changes. I marinated the chicken for a few hours in the baking dish, then baked. I didn't roll the chicken, simply laid the cheese on top. Very easy and wonderful for my superbowl "party".

Slow Cooker Kielbasa and Beer

This smelled fabulous but the sausage was very dried out. Maybe I made a mistake substituting Italian sausage. The sauerkraut, apples and carrots I added tasted yummy. But the meat was gross.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Very good. I omitted the sausage since my ham hock was very meaty. I used some cornstarch to thicken at the end. Very good and authentic. I might try to cook the rice in with the beans next time.

This bread is delicious. I used 1 lb of muenster and that was plenty for my cheese-loving family. Leftover slices were heat in the microwave for 30s to make yummy and melty.

Summer Squash Chicken Alfredo

A very good recipe. I added three bell peppers and used 12oz Roasted Pepper Alfredo. I think a little more sauce would have been great, but I love sauce. I thought it was quick and easy with minimal clean-up (two pots).

Hearty Multigrain Bread

Delicious bread. I substituted poppy seeds and extra sesame and sunflower seeds for the flax seeds. Otherwise, I followed the recipe. The bread is lihgter than I expected and just wonderful.

The final product was too much dough and too little filling. Both tasted good but the wrong ratio was disappointing. This it probably a result of my poor stuffing technique. I would like to try it again and hope for better results.

Bagel Bread

Yummy bread. I mixed in the bread machine and baked in the oven. I baked at 375*F for about 35 minutes using a 8"x4" loaf pan. The taste was not exactly like a bagel, but close enough.
