I am Mom to two wonderful kids and wife to a great husband who, bless his heart, puts up with me! I teach the 4-year-old group at the preschool my daughter attends and my life right now is crazy and busy and I love it!
My favorite things to cook
I love to cook and bake almost anything, but most of what I cook and create has a healthful spin on it, as I am probably what you could consider a certified health-nut! I love to do recipe revamps and make our old favorites healthier! I also love to make bread from scratch and I am proud to say I have not bought one loaf of sandwich bread since last June! And as they say, practice DOES make perfect, and I've finally mastered the perfect loaf of bread (at least to my family's taste)!
My favorite family cooking traditions
I loved cooking alongside my mom growing up (and still do actually!) and some of my favorite times in the kitchen are during the holidays when my mother and siblings and I (and our spouses) are all fighting for space in the kitchen together, cooking rich, delicious foods, and driving each other nuts at the same time :)!
My cooking triumphs
I always bake a great deal of cookies during the holidays which I give as gifts to family and friends each year. In the past a number of our friends and family, as well as my husband's co-workers, have asked whether or not I sell them or have thought about it. So this time, I decided to try it and was very successful!!! Everyone was very impressed by the 3-pound cookie platters, consisting of 13 different varieties of cookies and my homemade fudge!
My cooking tragedies
I can't make a nice-looking cupcake to save my life! Cakes just never rise the was I want them to, which is odd, because my muffins always come out awesome, and I rarely ever use a recipe for any muffin!

Banana Crumb Muffins
De-lish recipe! I healthied things up by subbing some whole wheat flour, and by using oil in place of the butter in the batter, and added 1 t. vanilla. Yummy muffins!

Amish White Bread
I never make white bread, as I am a health nut and usually prefer to make whole grain bread, but since I was making BLTs for dinner last night, I figured white bread would be nice for a change. It turned out very well and everyone enjoyed it. I made this completely by hand instead of using my mixer as I normally do, and I'm glad I did. I think making it by hand is what gives it the right texture. After all, the Amish do not use electric appliances. I used the full amount of sugar and unlike many reviewers I did not find it to be too sweet. In fact, it reminds me a great deal of Wegmans Farmhouse White bread from their bakery, which is a heartier white bread also. I will definitely make this again if white bread is ever required, and I see no need for changes!

Mexican-Style Taco Salad
Very good! I made as is except used a can of chili beans instead of plain kidney beans. Topped our salads with tomatoes, olives, yellow peppers, and green onions, then served at the table with extra salsa and sour cream. I will definitely be making this again!
