About this Cook
I am Mom to two wonderful kids ages 6 and 9 and wife to a great husband who, bless his heart, puts up with me! I am a preschool teacher of four-year olds during the school year and nature camp counselor during the summer! I am also an avid health nut! I make everything from scratch, nothing processed, and I took up kickboxing a few months back, which has me in the best shape of my entire life and I would reccommend to anyone!
My favorite things to cook
I love to cook and bake almost anything, but most of what I cook and create has a healthful spin on it- I love to do recipe revamps and make our old favorites healthier. I LOVE this time of year because my large garden is giving me lots of great veggies to use!!! My tomatoes are starting to come in full force (all 13 plants!) and so I will begin canning very soon!
My favorite family cooking traditions
I loved cooking alongside my mom growing up (and still do actually!) and some of my favorite times in the kitchen are during the holidays when my mother and siblings and I (and our spouses) are all fighting for space in the kitchen together, cooking rich, delicious foods, and driving each other nuts at the same time :)!
My cooking triumphs
I always bake a great deal of cookies (about 15 varieties) during the holidays which I give as gifts to family and friends each year. In the past a number of our friends and family, as well as my husband's co-workers, have asked whether or not I sell them or have thought about it. So the last couple of years I have and have been very successful!!!
My cooking tragedies
I can't make a nice-looking cupcake to save my life! Cakes just never rise the was I want them to, which is odd, because my muffins always come out awesome, and I rarely ever use a recipe for any muffin!

Turkey Breast with Gravy
Amazingly delicious! I made this for Sunday dinner today with my in-laws over, and it turned out perfectly! The seasoning rub and veggies in the cavity gave this so much flavor, and I cooked until my meat thermometer read 175- which was perfect. Very moist and yummy. The only thing I did not do was follow the directions for gravy. I have a foolproof gravy recipe I always use. Skim the fat off of the pan drippings, and then add them to a saucepan. Mix in a quarter cup of flour with a whisk until smooth, and then cook over medium-low heat until it turns into a thick roux. This happens fast, so don't walk away. Then add chicken broth a little at a time to your desired consistency. This always makes perfect gravy- no matter what type of roast you have made. I will definitely make this turkey again!

Red and Sweet Potato Salad
This is delicious! Now, I know some of you will hate this, but I did make a few changes, only because it is a cool fall day and I wanted this to taste like it! I changed the milk out for apple cider, used half mayo and half sour cream, and added a handful of dried craisins. Made it a bit different and very yummy! Basic recipe would have been a winner all on its own.

Dutch Potatoes
Delicious! I loved this and I can't wait to use the leftovers for pierogi filling, which it would be perfect for! Thanks for sharing this recipe!
