About this Cook
Stay at home mom in burbs. Found I really enjoy trying new dishes, especially ones that can serve several different functions, meaning good as leftover but can be turned into something else for quick-fix meals too. Love having fresh veggies & herbs to use, especially garlic & onion (my husband's rolling his eyes!) and especially home grown! down with mcdonald's-kids do NOT have to live on mcnuggets & fries alone!!!!!
My favorite things to cook
anything mexican, especially enchiladas(make double & freeze)with lots of veggies & beans. i love chilis or soups, year round (you're inside in the AC in the summer anyway, why not?) i really love gumbos or red beans & rice, recipes that need lots of mirepoix to heighten flavor naturally. and yummy salads with homemade dressings. and recently i just can't get enough sausage with saurkrut & potatoes. oh, and christmas cookies(otherwise i can take or leave desserts!)
My favorite family cooking traditions
my family has lots. the ones i continue are homemade knaeflies (knopflis)served with stewed tomatoes & piping hot great northern beans. liver dumplings, my mom's meatloaf meal( my favorite of all times) and several great cookie recipes that have been around forever in our family.
My cooking triumphs
having my dad ask me to fix something for him that he can't make since my mother & grandmother have passed away. having my husband say that i need to 'add this meal into the rotation' & wants to take it to lunch for leftovers & when my little 4 year old asks for more of anything cuz it's 'YUMMO'!
My cooking tragedies
cooking thanksgiving dinner for my husbands family. i tried to do it all...and do it the way that i always loved it growing up, and realizing that no one really liked much of anything i made cuz it's nothing like what they were always used to. plus, i fell short of several things, like the stuffing & the desserts, because no one liked pumpkin pie but my husband & me!!!!

Okra Curry
liked the spices but felt it was a little dry, added more oil than listed. the taste was good, i added onions to the mix as well, as this is what i've had in restaurants before. will make again, for sure. my hubby really liked it.

Spinach and Feta Turkey Burgers
i liked these just fine. they are a nice change from the heavy burger. it feels lighter, healthier, but still you feel full cuz it's still meat. i paired it with the greek tortellini salad recipe from here (one of my favorites!) & you have a winner!

Spinach Lasagna III
i liked this a lot. will make again. i switched the mushrooms for roasted red peppers (2 jars cut up) & was fantastic. used real mozzarella & was very hearty, didn't miss meat at all!!!
