Apple Pie by Grandma Ople

This was a really nice pie. I used store-bought pie dough (I know home-made would have been tastier) and used 8 Cortland apples. I added 1 heaping tsp. vanilla and a sprinkle of cinnamon to the liquid mixture. I mixed about 3/4 liquid mixture with apples, filled the pie, topped with lattice crust, and then spooned remaining 1/4 liquid mixture over lattice top. I baked at 350 for 1 hr. Fortunately I put a foil-lined cookie sheet underneath as it leaked a little bit. This pie was perfect!

Awesome! Made exactly as instructed & decorated the top with Oreos. It was so easy to make that my 5-year-old son helped me & he had a great time. What a delicious dessert!

Baked Havarti Chicken

Awesome! Went perfectly over white rice. I used only 1 can of chilies & used plain Havarti instead of dill. I used white wine instead of white cooking wine. And instead of the garlic salt, I used 2 cloves of garlic (minced) + some Kosher salt. Next time I will double mushrooms & sauce because we just couldn't get enough of them!

Zesty Slow Cooker Chicken Barbecue

So delicious! I cooked it on low for 7 hrs. & then I shredded the chicken with 2 forks and returned it to crockpot and stirred it around before serving.

Mediterranean Crescent Pinwheels

Very good, but too salty (and I like salty!). Maybe it was the prosciutto I used (Canadian-made, as opposed to Italian). I also think it could have used a little more basil. I'll try again with a better prosciutto or a low-salt ham.

Reuben Hot Dish

Fabulous!!! My husband & I stuffed ourselves on this last night. I made it in a deep baking dish that was a bit smaller than 9x13. Some changes I made were: used 1 can sauerkraut, pre-cooked the egg noodles, increased to 3 cups Swiss cheese, tore rye bread into tiny pieces and fried them in butter and then topped casserole with them.

Candy Corn Bark

Brought to a party & everyone raved about it. I reduced candy corn to 1 cup and it was perfect. Will make for other occasions, omitting candy corn and just topping with colored sprinkles. This is a great & versatile recipe!

Roasted Pork Loin

Perfectly delicious roast! I would have given it 5 stars, but I didn't care for the wine/drippings combo after I tasted it (and I usually love a strong wine flavor in my food), so I served the roast without it. Will make again & again!

Slow Cooker Thanksgiving Turkey

Made with 4 bone-in chicken breasts (I kept the skin on the chicken, and I browned it slightly in a frying pan for some color before putting it in the slow cooker). I used a dry packet mix of roasted chicken gravy (whisked with water according to packet directions). I omitted the bacon, and I used just a couple of dashes of Worcestershire & a light sprinkle of ground sage, garlic powder, & fresh ground black pepper. Cooked in slow cooker on low for 6 1/2 hours. After removing the cooked chicken, I made gravy by straining all liquid from the slow cooker into a saucepan. I then added a couple of spoonfuls of flour and whisked on the stove top until slightly thickened. The results were amazing! The chicken was very moist & tender. Just a note: I placed the chicken bone-side-down in the slow cooker.

Panna Cotta

Brought to a brunch and everyone loved them. I followed recipe directions closely, only I used a special type of vanilla extract called "crush," which has those little vanilla bean flecks in it. I divided the mixture into 24 mini nonstick pastry tins.. The next morning, I turned them out onto a platter (with minimal help from running a butter knife part-way around the edges). I topped them with fresh raspberries & blackberries. Super Delicious!

Chicken Pot Pie VIII

Super-delicious! I made the following modifiations & it turned out just right: Used frozen crusts, and made a deep dish pie. Used the meat from a store-bought rotisserie chicken. Omitted mushrooms and celery (for a fussy in-law). Added a big handful of frozen peas. Cooked veggies first (except for the peas). Used Imagine Organic Free Range Chicken Broth, which always makes recipes taste way better than caned broth. This broth comes in a carton and can be found in the Wild Harvest/Whole Foods-type section of the supermarket. Costs a bit more, but is well worth it. I can't wait to make this again in a couple of weeks!!!
