About this Cook
I'm a full-time working mom (by full-time, I'm an attorney, so I mean anywhere from 40 to 70 hours a week depending on my case load at the time). I've got a 1 year old little boy (born in September, 2008) and a great husband who is also a full-time worker. We are an extremely busy family and only have a couple of hours each week night together, which always seems to be spent cooking dinner and enjoying our creations at the dinner table before a quick bath and bedtime routine for our little guy! I also looooove spending the weekends baking and making more elaborate and time-consuming meals. I'm definitely an allrecipes.com addict!
My favorite things to cook
I grew up learning to cook and bake from my grandma and both parents, so I'm a "from scratch" kind of girl. I love to make the traditional "southern" foods, very meat and potatoes kinds of things for my family, but I also put myself through college working at a fancy high-end italian restaurant, so I've learned a lot about gourmet foods and love to do that stuff, too! I also love baking...cookies, cheesecakes, whatever, just love to make sweets for everyone!
My favorite family cooking traditions
My mom and I love making all the pies and cookies for the holidays. I always do little cookie tins for everyone at my office and my hubby's, and they're always a huge hit! Mom and I also love to try new cheesecakes and pies around the holidays, as well as different bars and breads. It's just so fun to see everyone go back for seconds and thirds on things we baked from scratch!
My cooking triumphs
I make THE best pumpkin cheesecake and THE best chocolate chip cheesecake ever, as well as a flourless chocolate cake/brownie that is crunchy on the outside and, when you dip into it, the center comes oozing out...I call it Fondente and it is DELICIOUS! Got that recipe from the italian restaurant I worked at and put my own spin on it and I always have people begging for the recipe. It's soooo much better than any other flourless chocolate cake recipe you can find because it's not "cake-y" at all....more like a brownie I'd say. I can also make a killer chili. My hubby won the chili cook-off at his office both of the last two years (the only two times I've entered)...the funny part is that this year I didn't think there was any way we would win because I threw it together last minute in a hotel room because we were out of town the night before and forgot to do it earlier!
My cooking tragedies
Toffee bars (those toffee saltine crackers or whatever they are called). One of my hubby's co-workers made them for a baby shower they threw me and I LOOOOOVED them, but cannot seem to get them right when I make them! She gave me the recipe and I can't get them to come out like hers did, so I found similar recipes on here and have the same darn problem! Would love to figure out how to make them correctly because they are delicious!

Spicy Sausage and Rice Casserole
Delicious! I did make the following changes...First, I used medium sausage and used the cayenne to adjust te spiciness to the level we like. Second, I threw the onions and peppers in with the sausage up front so they would cook and get tender while the sausage was browning. Then I threw the rice in with the tomatoes and the rest of the ingredients. Also, I took the advice of several reviews and cooked the mixture on the stovetop for about 15 minutes covered, then baked it at 350 for 10 minutes, then I added a layer of shredded cheese and baked for another 10. It reminds me of the stuffed green peppers I make, but in a casserole form. Delicious! Will definitely make it again!

Carne Asada Tacos
These were very good! I took advice from one of the reviews on here and used a jar of Salsa Verde instead of fresh tomatillos and it was GREAT and saved tons of time I think. Will definitely make these again! (Note to myself...use flour tortillas, not corn.)
