Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette
I thought the dressing had too much olive oil, I would cut back on that next time. I loved the citrus flavor in the dressing and the salad ingredients worked really well with the dressing.

Corrigan's Minestrone
Very easy to make, I used a little more vegetable broth than stated (double) to give it a little more flavor, I will definitely make this again.

Moroccan-Style Stuffed Acorn Squash
This was very good. I omitted the raisins and didn't have garbanzo beans, so I used navy beans, still tasted great and went very well with the squash. A little parmesan cheese added another layer of flavor.
