I've been married now for 5 years to a loving and devoted husband, have two beautiful children. I was working out of the home and when we discovered that we were preggers, we decided that I would work at home. I love being a SAHM and use my graduate degree everyday!

Chicken Tortilla Soup V
really easy and good. i actually sauteed onions, jalepenos (seeded and chopped), and the chicken all together with a little bit of olive oil and then added garlic, cumin, and chili powder. after i sauteed it a bit, i added the low sodium chicken broth then cilantro and a little more salt. i boiled the soup for 15-20 minutes and served with shredded cheese, sour cream, and avocadoes. also had tortilla chips and mojitos.

Bacon Quiche Tarts
This was more time consuming than I had anticipated but it was delicious and they also looked so cute! Will be making them as special treats for breakfast. As a side note, they freeze well too!

Fried Potatoes
My daughter (4yo) wanted to peel potatoes for fun and I wanted to use her potatoes. We used this recipe and thought it was fantastic! We will be using this recipe for saturday's breakfast. Next time I will adda a dash of paprika for color. My daughter was SO proud of HER potatoes!
