I think it needed a little longer to marinate. I just didn't seem to "soak up" the flavors. It still turned out tender and delicious, though.

Good, except for the cream corn. The sweetness just seemed not to belong in this savory dish. Maybe I'll use whole kernal corn next time. Other than that, it was very tasty and very easy!

Basil Chicken over Angel Hair

Very tasty! I didn't add the hot pepper sauce, we don't like much heat in our food. It still turned out very yummy! It is a great light dish for those looking to get healthy. Will definitely make this again!

Creamy Potato Pork Chop Bake

Good dish. I don't know what happened, but I had to cook chops alot longer. They just wouldn't get done in the middle. Plus, I am not a big fan of celery, I may try cream of mushroom soup next time.

Eggplant Parmesan II

Great dish! They were just as good as the original! I used egg whites instead of whole eggs, just to make it that much healthier. They turned out beautiful! Definitely make this over and over.

Onion Soup Pork Chops

A pretty good dish. I did have to cook it 20 minutes longer so the rice would absorb the liquid. Unfortunately, this dried out the pork chops. I should have removed them. I will definitely do this next time!

Squash Stuffed Chicken Breasts

It was good, but I would use a summer squash instead of the acorn squash. The sweetness seemed to throw the dish off a little. Plus, I will half the amount of celery.

Angel's Pasta

A good veggie pasta dish. I did substitute the fresh tomatoes with canned diced tomatoes. And I only had dried basil. We have had it 3 weeks straight. This one is a keeper!

Yummy! These reminded my hubby of his Mom's cookies. I did use butter instead of shortening. It didn't hamper the recipe at all. "Santa" liked them,too!

Marinated Pork Roast

Pretty good. It just seemed to need a longer marinating time. I did omit the celery salt, because we don't like it. I also didn't have mustard seed, so I just doubled the mustard powder. Hubby liked it, but we both agree it needs to marinate longer.

Beef Teriyaki

So yummy! I did tweak it a little to make it cheaper on my part. I used chuck steak instead of sirloin. It is just as good. I also used instant brown rice instead. Hubby really went on about it. Will make this often!

Skillet Herbed Chicken with Mustard

This was a suprising thumbs up from my picky hubby! I did omit the tarragon and used chicken broth instead of white wine. It was so quick and yummy! Next time I will double up on the herb mustard mix and broth, just to have more sauce.

Pork With Sugar Snap Peas

This is now our favorite dinner! I did tweak it a little in order to make it quicker. I sliced pork chops instead of the pork loin. I used a 16 oz bag of frozen sugar snap pea stir fry veggie(no need to defrost!). I also doubled the sauce recipe, but put in 2 Tbsp vinegar and 2 Tbsp chicken broth. Also added a little cornstarch to thicken it.

Ratatouille Pasta

YUMMMMM! I substituted a jar of spaghetti sauce for the "sauce" ingredients. It was just as good, and really easy!! My hubby LOVED it!!
