Beef and Roasted Red Pepper Sandwiches

Beef Tenderloin Salad
I had some leftover beef tenderloin and wanted to make a salad. I didn't have any tomatoes or asparagus, so I used what I had in the house, and made the dressing in this recipe. Yummy! I didn't think I would like it looking at the list of ingredients, but I had a second helping!

Baked Trout Fillets
Terrific! I never measure as I just cook for myself, so I didn't realize how much sour cream it called for. Just use enough to coat the top of the fillets. I used red onion to give it more flavour. So tasty!
