Salmon Cakes II

I didn't really measure anything, just eyeballed it, and the cakes turned out deeeelicious. I only made a couple changes...I used dried parsley and instead of bread crumbs used a prepared chicken coating that I use for everything because it's sooo good! I also recommend frying in peanut oil instead of olive oil and butter - the latter mixture burned way too fast!

Corn and Chicken Chowder

I made a couple of changes. Used bacon instead of ham, used whole milk, used canned corn, and thickened with corn starch. It was so good - EXACTLY what I was looking for!

Fluffy French Toast

Delicious french toast! Very good flavor, everyone loved it (even the people who had to eat it with gluten free bread). I doubled the cinnamon, added 1/2 tsp nutmeg, used Texas Toast and topped it with sifted powdered sugar. It doesn't make 12 servings, though! :)

False Cabbage Rolls

Very tasty, hearty and healthy. My stepdad, who was sure he wouldn't like it, ended up asking me to make it again as soon as possible. I only changed a few things - I added dried basil and parsley in a 2 to 1 ratio (about a tablespoon or so of basil). I also used two cans of tomato soup that weren't concentrated, and two cans of petite diced tomatoes. I simmered for an hour and added cooked brown rice at the end. The sour cream was a GREAT touch. When I served my boyfriend he actually asked for sour cream and I got to tell him it was already in there. :) I let everyone add their own hot sauce to taste. SO YUMMY! I'm making another pot of it right now and can't wait to dig in.

No Beans About It - Chili

I needed a chili recipe for chili dogs. This was good, but needed more spice - it didn't have enough of a real "chili" flavor. I substituted the vinegar for worcestershire sauce as some suggested, but I won't next time, as it made it taste more like sloppy joes than chili.

Yakitori Don

Excellent. I used reduced sodium soy sauce as suggested by many and it turned out perfect. I replaced the sugar with pure maple syrup and had to use plain white cooking wine instead of sake because I couldn't find any. I only use white meat chicken so I chopped some breasts, marinated overnight, and made skewers on my George Foreman grill. Served it with some fried rice and everyone thought it was great!

Southwest Chicken

Yummy! I sauteed a yellow onion in olive oil, then added chicken coated with taco seasoning (from this site) to the pan. I browned the chicken, then sliced it. Then I added the tomatoes, beans and corn and simmered everything until the chicken seemed done. I didn't need to add any cumin or any extra spices because it was already so flavorful. I served it over brown rice and with sour cream and guacamole on the side. So easy, so tasty, and so healthy. A winner!

Cinnamon Griddle Cakes

I upped the cinnamon a little and used pure maple syrup instead of corn syrup. These were AMAZING! And they really did taste like cinnamon rolls - YUM! I saw many people had problems with the batter, but I didn't. It turned out perfect.

Pollo a la Crema

This was surprisingly good, like WOW good! I make it regularly, only instead of in a tortilla, I serve it over brown rice with a side of broccoli. My boyfriend LOVES it. Every time I ask him what he wants for dinner he goes, "Can you make that chicken and rice stuff with the sauce?" Hahaha!

Chicken Katsu

I loved this chicken, it was deliciously crispy and tender just like something you'd buy at a restaurant. I WAY oversalted it, but that was my own fault! I served it with sesame noodles I made up on the fly: thin spaghetti, butter, olive oil, a splash of soy sauce, a splash of sesame oil, a little salt and a whole mess of sesame seeds. It also would have been good with some broccoli added in. **Update** I can't stop making it, it's just SO crispy/tender/perfect! Lately I've been serving it with a salad and a toasted roll with butter - I don't even make any sauce for it - and it's sooooo good that way!

Turkey Ragu with Fontina and Parmesan

Mmm, mmm, tasty! The sweetness of the Vidalia onion contrasted nicely with the strong Fontina cheese. I used ground turkey breast and no one could even tell it wasn't beef! Next time I make it I'm going to substitute a prepared marinara sauce for the crushed tomatoes and maybe use more than called for, as I like things a little saucy! This was very easy and fun to make, and everyone liked it. Thanks!

Crispy Fish Fillets

I used flounder and tripled the egg/mustard mix in order to have enough to coat the fish. This was so delicious my mom (not a fish fan) asked me to make it every week. YUM YUM YUM! It was so flavorful it didn't even need tartar sauce.

Black Bean Soft Tacos

I've made this a few times now and never seem to get tired of it. My boyfriend said it makes Taco Bell taste like garbage. I used one can of black beans and one can of small red beans. I also added some cooked rice to the skillet and cooked the filling for a lot longer than recommended. I like the filling to be very firm and not runny or sloppy. The spices were absolutely perfect. Hard to believe this is a vegetarian meal. Deeeelicious!

Pasta with Peas and Sausage

I changed a few things. I used chicken sausage and penne pasta and sliced onions instead of peas. I also made a low-fat white sauce with flour and 1% milk, as another reviewer suggested, and it was great. It doesn't need all the extra fat and calories. Family scarfed it down.

Angel's Pasta

I loved this meal and I am NOT a vegetarian! I added one small eggplant (peeled and diced) and used a 14.5 oz. can of diced tomatoes. I also halved the recommended amount of pasta so it would have a higher proportion of veggies. With these changes it made two hearty servings. Fresh basil is an absolute MUST!!!

Indian Chicken Curry II

Very yummy, extremely healthy, and a hit with the family! I didn't add any sugar, didn't use a bay leaf, used 3 chicken breast halves (and it was the perfect amount of sauce for them), and added only 1/4 tsp. cayenne pepper. The aroma as the sauce and chicken were simmering made me nervous, because it smelled very yoghurty and cinnamony...I thought "is this going to be any good?" But after it was done and served over hot brown rice (with some tomato and green onions on top, as another reviewer suggested), I started hearing "mmm"s from the fam, and my first bite was scrumptious! I will definitely be making this again.
